It is referring to a blade style. Not who and how it is made. As for leaf spring steel it is well suited for high carbone knife blades. It is off course not a stainless steel but so do original Japanese knife blades. They do what they can with what they have.

@@stevenbaker43 Absolutely agree. One problem is bad heat treatment, poor quality control and a knife blade needs to be water cooled during sharpening. It removes all benefits of heat treatment. Whatever they do with torch is not a proper heat treatment. Metall needs some time to change in to austentitic or martensitic phase. Which even further destroyed by sharpening with out water cooling. Manufacturers do not recommend to wash knives in dishwasher for same reason. Overtime it recerts heat treatment.

they used used leaf spring steel 5160 carbon. It's a quality metal which makes good knives.

Those imbeciles who don't understand, for them, These knives don't have printed Made in Japan on them. These are Japanese style kitchen knives. They are sold in Pakistani market around $5. If you want them just like Japanese quality polished, then you will have to pay $3 on top.

Not top quality at all. The process they use with what tools they have is amazing. But the end result will be an edge that goes as blunt as a butter knife. The title of the video is so misleading. There is nothing in the process of these knives that is even slightly Japanese, except Maybe the silhouette of the knife if you squint hard enough.

@@ukestudio3002 Yes, a properly heat treated knife, made from high carbon steel can indeed last 100s of years. But the steel these guys are using is a mystery, the torch heat treat is inconsistent, and their aggressive grinding on the stones ruined the temper they set in some of these knives. making them essentially, butter knives.

So this is why when i use a sharpening device with preset angles it has difficulty sharpening. If they used an angle stock while grinding the knives it will make everyone who buys one easy to maintain and keep it sharp. But then again they never correctly tempered the steel so it’s crap anyway.

The reason you use a sharpening device is because you have no idea of how to sharpen by hand. Your father, grandfather, and millions and millions and millions of people around the world sharpen by hand and get their knives very sharp...............You could never do what these do.

The lack of temper means they are also bad at holding a good edge and have poor characteristics when sharpening. FYI I've made knives properly .
