How would you then go about using this data while trading? Would you count the current price of the stock during the day as a closing price and recalculate the ema based on that information? Started a project recently and not sure where to start with that part.

Yes, that's what I would do in that case. That way you are basing it on the most up-to-date data.

You can get stock prices in Google Sheets and Excel but the data won't be live, 15 minute delays for both I believe. You would need a service/API that can give you live data.
