We use a thicker jamb on kerfed doors because there is no trim to lock the jamb in place, and I like to sheetrock and then install the door and then install door trim into the kerf.

It is a good way to go. I never thought of making the jamb a little thicker.

It's mostly design choice. I personally do not like them. They are more of a headache.

I have not seen any problems, as long as the door is installed well.

If drywall installer is not familiar, training is a cost. If they know how to do it, then you have no casing, which means less carpenter and less painting of trim.

Surprisingly they do not crack. There is some metal flashing that fits inside the kerf channel. This actually makes the door stronger.
