For me, the store bought carton stuff occupies an entirely different space than real eggnog. I love all the homemade recipes I’ve tried, but the carton stuff is nostalgic and reminds me of decorating the Christmas tree as a kid. I don’t bother with boozing up the cartons either, at most I’ll just grate some nutmeg and orange over the top.

I've made Dr. Rebecca Lancefield's eggnog for years. She was a well-regarded microbiologist, and her recipe is safe and delicious. 1 dozen eggs 1 pint bourbon 1 quart rum 1 quart heavy cream 1 quart light cream (I use half and half because markets around here don't bother stocking light cream) Sugar to taste, usually about 1 pound Beat the eggs. While beating, pour in the alcohol. Keep beating as you add the booze - if you stop, the alcohol may coagulate the egg proteins and cause scrambled boozy eggs. (This is probably the step that makes the nog safe - the alcohol concentration is higher in this solution than salmonella and other bugs can stand.) Once the booze is incorporated, stir in the creams. Add the sugar and whisk until dissolved. Put the nog in a jar (makes a bit more than a gallon) and leave it in the fridge at least overnight. It's better after 3-6 weeks. I've aged this recipe five years or more - it never goes bad, it just gets smoother and nicer. Serve with a light grate of nutmeg. Variations: I've started using black strap rum and Demerara sugar to make a richer final product.

I've really enjoyed Alton Brown's aged eggnog recipe. 12 large eggs yolks, pasteurized if you need peace of mind 1 pound sugar 1 teaspoon freshly grated nutmeg 1 pint half-and-half 1 pint whole milk 1 pint heavy cream 1 cup Jamaican rum 1 cup cognac 1 cup bourbon 1/4 teaspoon kosher salt Mix the sugar, salt, and nutmeg into the egg yolks, add the liquids. if you do make this make sure to age at least a month in the fridge. The original recipe calls for a minimum of two weeks, I've found at least as month is much better, and a year is the best. Drink and enjoy responsibly.

My theory is that the local grocery stores are going to source their store-brand stuff from local creameries, which is probably why they are decent. The local creamery-branded stuff in my area is very good. Usually a bit on the thick side, but it's really meant to be cut with booze which thins it out (I prefer brandy, my wife prefers rum) We made Morgenthaler's egg nog one year and it's absolutely fantastic, but also a different animal than the store-bought stuff.

Hey Greg, I have a request that I suspect would be really helpful for a lot of people. Could you do a series on "keto" and other diabetic-friendly drink options? Basically using some sugar-alternatives that result in a similarly balanced experience? Eggnog is one thing I miss about the holidays now that I'm on keto. I've lost 70 lbs so far and I'm not above making my own eggnog to keep it sugar-free. -- Egg nog is definitely a trickier one since milk actually has a bunch of sugar in it, so maybe an alternative with almond milk or heavy cream instead might be a good workaround? :)

Greg, I have always steered clear of eggnog until Christmas 2020 when my girlfriend convinced me to make it at home. For all the reasons you listed and more, I DETEST store bought eggnog. Approaching Christmas 2021, I’ve consumed more egg nog in the last two weeks than I have in my entirely life up until now. Homemade nog with a nice high proof rum or bourbon are definitely the way to go. My life is forever changed.

I love non-alcoholic eggnog, but the only store bought version that I like is the Southern Comfort brand, I tend to cut it with more milk though, I think the store bought versions are meant to be diluted with alcohol as they're too strong of a flavor and too thick to be drunk by themselves.

Actually, people led you wrong. A Flip is a classic cocktail & has been around since the late 1600's. It is composed of a base spirit, egg, & sugar or simple syrup - usually shaken & served up. But it contains NO cream. A Nog, by definition, is very similar to a flip but contains cream. In other news: if you mix your eggnog separate from your egg whites, beat the egg whites until peaks form then fold them back into your initial mixture, it'll change you forever (obviously this would be done for more than a single drink, as say a punch bowl portion). - LOVE the channel, keep up being awesome!

I vaguely remember seeing or reading something a while back that said that the modern, non-alchy eggnogs are based just runny custards and based on something completely different from either a traditional eggnog or a Tom and Jerry. Since they would need to be pasteurized, I imagine making with a process that requires cooking anyway is probably simpler. The alcoholic ones don't really need to be as heavily pasteurized since the alcohol will kill a lot of bacteria. I'm curious about this now so, I'm going to try to find the thing about modern eggnogs I mentioned above. I'll come and edit this comment with what I find, if I do manage to find it... Edit: Yeah, modern eggnog is a descendant of sack posset and it is a type of custard. I don't know much about sack posset or Tom and Jerry, so it's possible T&J also descends from sack posset and eggnog descends from that but I didn't find anything about that. Also, I *really* like all kinds of eggnogs--I don't think I'd enjoy the non-dairy ones you tried but I haven't tried them myself so those might be the ones that break me, lol. It would be fun for you to find as many different recipes as you can for it--alchy and non-alchy--and make and compare all of them.

The thing is you can pasteurize your egg and milk components separate before mixing your ingredients to keep from cooking away the alcohol... Just requires a specialized set up for making carton egg nog that no one does because egg nog is seen as just a seasonal drink, and if you're going that far to make something that isn't boiled custard, then you're making a homemade nog.

Hey - a Nog is either a very potent beer that’s brewed in my neck of the woods (east Anglia, UK) or a small mug (more properly referred to as a Noggin) used for drinking beer from. Weirdly, the first recipes from the UK also referred to it as an Egg Flip, even though it had milk in it, so either the FlipNog purists aren’t as right as they think they are, or the distinction is something that happened when it migrated to the states. I don’t like Eggnog, so I present these things (I hesitate to call them straight-up “facts” as I could well be wrong on all counts) to you, the HTD Booze Community (Boozemunity?), in lieu of my approval.

There is precedence within Coquito to sub some of the milk for Coconut milk, so I don't see why you couldn't do a coconut based nog with aquafaba as the thickener, might have to thin it down with some other plant milk, but I would target ~20% fat for a creamy "custard" type nog (based on my experiments with milk and cream at various proportions).
