Have had my chickens a little over a year now. I have a solid floor in my coop, spring/summer I change pine bedding every couple weeks. Winter I only had to change it every month or so, whenever ammonia smells starts. Only 2 inches deep when its warm, 3-4 inches when its freezing. I kept the coop 36-45 degrees and had eggs all winter. We got down to -65F with wind chill

Yes... one issue is that people are doing the deep bedding for 12 months at a time without any rotation or turning, then add in the cold weather and can be a mess.

We do deep deep bedding but don’t turn it. 5 gallon bucket off to the side and wife goes out once a week with gloves and places chicken manure with small amounts of bedding attached into bucket. That goes into compost pile. Have several piles going at once at different stages. We add bedding maybe every 2-3 month. And completely clean it out every 6 months ish. No flies in coop or run. 20 chickens +\- for about 10 years this way. Also add sweet PDZ to bedding helps

Any concerns that the chickens will want to be under the coop more than inside of it? Laying eggs , not going in at night, Etc.

At some point you will have to supplement straw or what you choose. If you keep recycling the chicken waist it will become toxic.

Have you raised chickens before Doc? This will work in theory but you are adding a sizeable amount of unforseen labor using this method. Its "easy" when they're chicks.
