In North America most hotels ane restaurants are not use butter for cooking, butter too expensive and the bruning point was low. Brown sauce take at least 6 hour to make, most sauce never add whipping cream and the cream will do the work. You look like making Beef Stroganoff. Most hotels and restaurants they making this dish is very simple, they Julienne the left over roast beef and put in the brown sauce with saute mushroom and slice onions. Optional top with sour cream.

I remember in the good old days at Russian style restaurants......wonder if sometimes they use 'contaminated beef' the sour willcover?!?/!!!
