*_What about these tests where they let babies eat whatever they want, and they can see that those babies who need Iron would go for meat and even raw meat. So isn't this an instinct, too seek out food one needs? I've wondered if not the obese have a grand lacking in nutrients, but there's something in the crap food they eat that mimics what they actually need and the body gets confused about and thus they keep seeking quick carb snacks x10 a day?_* *_If I want smoked salmon, doesn't that mean my brain wants Omega-3?_*

It doesn't have to get this complicated. Processed carbs increase grhelin while high protein foods increase leptin and make you feel full longer. We've known this in nutritional science for a long time.

Weight loss and weight gain are both the easiest and the hardest things in my life. Every time I gained lots of weight was when I was too stressed and anxious that led me to (consciously and unconsciously) consume copious of fat + carbs; e.g. multiple plates of spaghetti in one sitting (which has plenty veg oil and beef fat in it) or I ate jam + butter toast / bread to a point that I was physically uncomfortable and not because I felt satiated. UPF definitely makes the situation worse, but it's not even close to stress and anxiety. Sleep is another big factor to fight against. And every time I lost lots of weight, was due to help of ketosis / fasting, some endurance physical activity like long distance cycling, more sleep and having very little anxiety.

The diet Huberman illustrates is a basic version of the Atkins diet - limited carbohydrate higher protein. Then, adding CHO foods back into diet.

I don’t believe this is correct. The study he is referencing didn’t standardize for palatability but for calories and macros. The UPF had the higher palatability and therefore is hypothesized led to overconsumption of calories daily, approximately 500 calories per day.

Yes, the Hall study had design limitations. Also, many scientists and funding agencies have biases AGAINST ultra-processed foods. Thus, studies are designed to determine unhealthy aspects of UPFs.

I've cut out chocolate bars (and tried to reduce most other forms of sugar) recently. I had a kit kat (small one) the other day and it tasted so different I couldn't finish it.

There are economic incentives to process food. Simple healthy food from the farm is too simple, doesn’t create enough jobs etc. but our health is more important!

I quit drinking diet soda completely and within a month (my only source of artificial sweetners) I lost 10 lbs without changing anything else and it has stayed off. This is the first time since I was probably 22 years old that I've gone this long without any diet soda and the weight has not come back still (after several months). I did not start exercising. I did not stop other sweets.
