Why Indian street vendors' scrapping and squeezing ready to serve food with hands? Sure all countries touch their ingredients with hand before they cook their food but most of the street food in India are touched and squeezed before serving them. I saw pani puri and thinking why squeezed the potato with hands, when you could use potato smasher or pestle or even fork? Why mix rice crisp and wet ingredients with hand when you could use spoon?
