I've searched all over for this. My Grandma, Mariska Baumgartner, came from Hungary to Chicago and made this for us, her grandkids. OMG, it was tastier than ice cream and I was determined then and there to learn how to make it. She died when I was only 8 so that never happened. I'm teaching myself at 72 years old and a grandma myself how to make this soup. Thank you so much. I'm in your debt.

My dad used his grandmother's recipe for both the soup and homemade noodles; he'd get up at 7am every Sunday in the fall and start making noodles and then the soup. We'd have a mid-afternoon lunch of soup and then soup for dinner. However, he never put in cauliflower, cabbage leaves, tomato, or Kolorabi. He would sometimes put a potato in. I make it every now and again, but I'm no good at making the noodles.

Same kind of soup we do in Moravia... yet so different. For example, we'd use the clear broth to boil the noodles. No tomato. Fresh Paprika - maybe. Also, I personally prefer beef broth, but chicken will do. :)

Én 6 évig éltem New Yorkban és többször is megfőztem ezt a levest - mindig jó lett :D Fontos, hogy jó minőségű csirkéből készüljön, az adja meg az ízét. Ha nem sikerült fehérrépát vennem, azt "parsnip'-el helyettesítettem, a zellergumót meg friss zellerszárral. Szerintem a többi hozzávaló mindehol kapható. Sok sikert! :D

I always cook it uncovered, on low heat for hours. This way, some water evaporates, the liquid will be more concentrated, more flavorful.

Thanks for asking (it's not a dumb question at all!). The foam is protein from the chicken (and it appears cooking other meat soups too) which come to surface when the water starts to boil. It's harmless and edible, but if you want a clean, not cloudy soup you should skim it off.

Oh I am going to the store tomorrow and I am going to make this. Often our family would just use parsnips, onion, carrot, tomato, and vegta but I would rather stop using vegta as it has sugar and msg.

I'm glad you like this recipe! Those vegetables you mentioned are the most common veggies in Hungarian chicken soup. I just like to add others (sometimes whole potatoes too) for extra flavor. Sometimes I use vegeta in vegetable soups (pea soup, cauliflower soup etc) but not in the chicken soup. I've seen recipes for home-made vegeta which is more healthier then the store-bought.

Fantastic recipe! :) So many Hungarian families and other Eastern European countries use Vegata :( WE need to get away from that synthesized unhealthy enhancer. I got my mother to stop using it. Just add more chicken or use less water. Easy peasy! Natural & Virtually no change in flavor :)

Does the skin taste good when boiled like this is the soup? Or do you remove it before serving?

I usually serve the meats separately on a large plate, and everyone can decide how to put it in his/her soup - with or without skin. (most people prefers it without skin). Actually the taste of boiled skin isn't good isn't bad - but it gives a really good flavor to the soup.

Looks good, but to be honest it's a bit of a turn off to see the dish you just created being eaten by your dog at the end.
