On the menu today: a delicious bowl of banana nice cream topped with burnt caramel and pistachios! What is 'nice cream', you ask? Keep reading :)
While this looks like a bowl of ice cream and tastes like a bowl of ice cream it is in fact just a bowl of frozen, blended banana - also known as ‘nice cream’.
When blended, the frozen banana turns into a creamy soft serve-like texture - just like ice cream! How this magic works, I’m not entirely sure. (I believe it has something to do with the starches in the fruit?) The important thing to note is that it will only work with frozen banana and you will need a high-speed, high-powered blender (I have a Vitamix) to make it. Blenders with less speed and less power will not be able to cope with the force needed to break down the frozen banana. (Seriously, do not try this with anything but a high-speed, high-powered blender or you will break the blender!). Also, riper (spotty) bananas work better for this as they’ll be sweeter and produce a more creamy consistency.
To make nice cream simply add a touch of liquid (either water or plant milk) to cover the bottom of your blender then add some frozen banana and any other flavours/ingredients you wish to include. Blend until a soft serve-like consistency is achieved. You can add more banana/liquid if required. Just keep an eye on how it blends and make adjustments to get the right consistency.
You can flavour your nice cream however you wish. For today's video, I've added some burnt caramel sauce (made from condensed coconut milk that I boiled on the stove until it browned and slightly burnt) and fresh, raw pistachios. I used 4 medium-sized frozen bananas for my nice cream mixture. (Note: you can use as many or as little banana as you'd like. You do not need to use four like I have in this video. This was simply to fill the bowl for presentation's sake.)
