Ok, nice video but how, "exactly", would a piece of small debris that gets captured in the filter, interfere with the gearing/transmission that controls the rotation of the head?

Debris would hinder the flow of water to the turbine. The pressure of the turbine turns the gears. If there is debris in the way it may slow the flow of water and the reduced flow may not be enough to turn the gears.

When i do this, the whole assembly just unscrews from the pipe. How do i only get the guts out?

You may need a second wrench or pliers, one to hold the body and another to turn the cap.
