I plan to head out for grouse in a couple of weeks. I will be changing my method of cleaning birds so as to utilize this method and prepare the tasty, compact roast chicken that you demonstrated for us all. Thanks for posting this!

Great video, I would recommend showing the cut and bite sequence. People invested time watching the cook, but don’t get the pay off of seeing how the cook turned out. Cheers.

how did you pluck and gut it like that. i cant find any videos on how to do that. all i find is the normal breast removal.

Nice video. I always get a kick out of explainations of Juniper berry usage & flavors. Short answer. Very stong "take over flavor" spice that kills most of the gamey tastes of wild game. Similar to the use of allspice. No matter what meat your devour, the juniper completely takes over as the primary flavor.
