My name is Kitty Kanhoffen, I am a teacher as well as an outdoor enthusiast. My passion for the outdoors first started when I was introduced to fishing through my husband Daniel in 2012 and it expanded quickly when I began co-hosting on Fishing with Rod. The curiosity did not kill this Kitty, but has only furthered my passion beyond fishing, which now includes foraging and hiking in British Columbia, Canada.

Recipe Ingredients: 4 cups beef stock 3/4 cup sake 1/4 mirin 1/4 soy sauce 1 bunch of green onions 2-3 table spoons of peanut oil for frying pines, veggies, and steak 1 1/2 cups of bok choy 4-5 small to medium pines 1 package of tofu (medium firm) half of package of rice stick noodles (size s) 1 pound of thinly sliced steak 1 tablespoon of sugar Enjoy!! 😊

Well they can argue all that they want, but no one should EVER cut a Pine. The base is CRUCIAL for ID purposes. The last thing you want to do is mix up a Pine with a mushroom that WILL cause kidney failure (Amanita smithiana or A. silvicola). It still happens from time to time that I nearly mix up both species at the button stage, but it is the base that always saves me. Other species I do believe that cutting is best, like for Cauliflowers or Bear's Head. By cutting the mushroom itself you don't damage the wood that it is growing off of. That is where the mycelium is, and I never want to ruin the chance of future flushes. Thanks for the support! ✌😃

@@KittyKanhoffen you are absolutely correct. I've been picking for over 40 years and I would never cut a pine mushroom. I would suggest you clean the stem back into your pick holes and refill those holes. I can tell those are vancouver island pines! Im curious who the morel buyer was that asked you to pick spruce tips?

This was awesome! I almost felt like I found them with you, LOL Great hunting! I added gloves to my mushroom picking bag. It is easier to poke your hands under logs to search for those elusive mushies. As a newbie you have inspired me on how to find these amazing mushrooms. Maybe I will strike white gold myself next year. 😂

@@JenSpice Another good thing about gloves, when a spider crawls out from under the cap when you're sawing through a Chanterelle, it isn't as freaky! :P I am glad you felt like you were along for the ride & you were inspired to get outdoors. This was marvelously produced, and edited. The dish looks absolutely delicious & so healthy! I could actually see some of the mycelium while you pulled a couple. You have the best climate and terrain for foraging for such an array of mushrooms. Really enjoyed, thanks...

Every time you pluck a pine and see the ashy spot it is called podzol. It isn't the actual mycelium. I have to agree we are so lucky and this year I feel like conditions were mint, or maybe it was just luck. Whatever it was, I'm thankful for it! Thanks for watching!

Hey Jeff! Sorry I haven't been as active on here lately... School was quite busy this month, and then as soon as Spring break started I needed that mental hiatus, so I've been out in the bush fishing and foraging lately. Honestly this dish is fool proof, and I am sure you'd do just fine! All you need are the pines, that's the hardest part. :) Thanks for dropping by!!

I always carry a soft paint brush or my schroom knife it has one attached and a hooked blade . Oh yea you are beautiful !

Spent 3 weeks in Washington and found a bunch of golden chanterelle's and lobster mushrooms. They were so good. Love your videos. Keep them coming. Merry Christmas

Love it when we follow our gut telling us things!! Pulling back the raised needles is where I've found #1s... if I can get to them before deer or turkey dig them up. Haven't looked in a long time. Love this. Thanks for the recipe - it looks like Pho. Have you tried it with with fresh basil & lime or would that not be appropriate in this one?

@@KittyKanhoffen No worries. I know this is not exactly the same, but when I saw you add the beef slices to the hot stock it made me recall the wonderful extra dimension of flavor it added the first time I was encouraged to try it in pho. My thoughts overflow through my fingertips. Carry on ~ ;)

@@selfretired3025 Kitty is exaggerating a bit, I'm not that much more experienced. 😉 She has really progressed in her cooking in the past few years. Anyway, traditionally pine mushrooms have always been tied to Japanese cuisine, probably because it's a fungi found in this the North Pacific. Not sure if fresh lime and basil would go with the sukiyaki flavour, but I'd think the mushrooms would go just fine with a bowl of pho! Speaking of pho, that's what I'm making tonight actually! 😊

@@selfretired3025 I think you'd like it if you enjoy pho. 😄 I grew up eating sukiyaki and it's more of a hearty dish for the winter months. Pho, although is also a bowl of warm soup, still feels like a refreshing dish which can be enjoyed year round.

Loved the video and recipe. It looks like an amazing dish for a cold day. It looks like you found the zone for pine mushrooms. So, first good cold snap but what elevation were you at? I found some back in October that I thought might be pines but they looked old, buggy, soft, and had no smell so I couldn't really tell. No smell makes me think they might not be pines but I'll try again next fall and see if I can time it right. Do pines loose their smell as they get older. I have been steelheading since I was 16, now 42, so it is fun to have something else to go into the woods for... while I'm fishing of course🙂.

That is how it starts, mushrooms dip into a littttttttttttle bit of your fishing time, THEN they take over your WHOLE life (speaking from experience 😜). So I'm warning you, be careful! We have found fully flagged out Pines, because of their strong aroma. Do do they lose their smell when they get older, not that I have noticed. All Pines we pick have had that distinctive smell, some maybe just fainter than others.

@@KittyKanhoffen So sounds like they weren't pines. I won't eat anything I'm not sure, of thats for sure. I did find a couple golden chantrels this year but left them for that reason. Next time they will come home with me.

pines loose their smell if its wet and raining alot. When its dry out you can often smell them before you see them.

HEEEEY PAULIE!!! KITTY HERE! I know I did reply to you on that last video, but it was nearly a week later, as life as an educator got busy. After a very successful weekend of foraging, I am feeling much more like myself this week, which is awesome. Work is tiring and rewarding for us all, you got to make sure you take some time for yourself Paulie, REST, RELAX, go fishin, foraging, hiking, or panning... Whichever you prefer. I'm sorrrrry! It is something I could eat over and over again. A dish I never get tried of. I am sure you could use any mushrooms, but I do believe that much of the flavours come from the Matsutakes themselves. Their flavours also pair well with the other ingredients. Do you smell cinnamon hearts or stinky socks? (Those are the two smells people use to describe how pines smell). :P

I have heard that you shouldn't rinse the dirt off mushrooms...and sure enough you didn't! My mother has this little brush that she uses to clean mushrooms with. Looks sort of like a nail brush or a potato scrubber.

I am glad I did it the way your mother would be proud of. With all mushrooms, I try my hardest to clean out in the field so I don't come home with a bunch of foliage. I'm sick of vacuuming up dirt and Doug Fir needles by the end of the season. :P

Not sure where that started, but rinsing under the tap is fine. They do consist mostly of water after all. Pine can put up with brushing under the tap with a mushroom brush as they are very hefty. I like a soft tooth brush myself. There's a cottony layer on the cap and stem that peels off like Kitty did. Dry brush most stuff off before wet cleaning so you don't plug the sink drain/P-trap!

@@wingnutbert9685 Well one time I cleaned some fresh mushrooms to put on pizza. I took a shortcut and run them under the tap. It made my pizza a bit watery on top! But to put in a salad that you'll eat right away, I don't see a problem with rinsing them.

@@petercollin5670 Did you fry them first? For pizza, I found, you have to fry them first. Shrooms are high water content. If you go raw right to the pizza, they will definitely soak yer pie. :) I even rinse my delicate Chant's and brush with a soft tooth brush. Let them sit on a towel for an hour and they are good to go. I even fry off Matsu's before the go on pizza, even though they have less water then reg. brown mushrooms or Chant's. BUT, that's just been my experience.

I find pines and beef to be a strange pairing, at least when together in the same bite of food. I hate to say it, because I love pines, but they'll ruin a good hamburger or a hot beef dip sandwich. I feel alone in this unpopular opinion though. But CHICKEN is where it's at, served with pines delicately cooked in a rosemary infused butter. Rosemary and pines are magical together.
