May you live long... Miss so much my early days in my career in Hyderabad. I tasted biryani for the first time in my life in hyderabad and it stayed with me. Yes, I do get 'hyderabadi' biryani in my current place but not as good as what was available in hyderabad.

Best Biryani making process. For lesser no of family member you can make it in a pressure cooker but I don't think that's going to be matching with this. Here you have complete mutton marination. I really love it. Lot of effort been put by all the participants. Really mouth watering dish ! Keep it up !

Enjoy!!!! What more can I say. This food has a historical significance too. The Mughal army during the time of Emperor Akbar were given this sumptuous meal which energised them during war or journey. More than 400 year old recipe??? Just amazing for me. Now this food is relished by the people of the World. Just guage its popularity. It leaves me spellbound. And this great cooks are just just people with super cooking skills.

I belong to the chef profession, Appreciate for putting a good amount of efforts in executing the product and apparently the visibility is o.k, But may I pls ask u why KASOORI METHI ( Fenugreek leaves) Malai, Rose petals and Cream has to be added in the marination? And of course If u could pls try to exempt Saffron in the meat as well I understand every one has their own kind of ingredients and the method of preparation, Certainly i guess the taste would be o.k. But real Kache Gosh Hyderabadi biryani doesn't has the above mentioned one's In the meat. With great respect is it pls possible to modify the Recipe.

The high flame initially targets the whole dish to a steam letting rice get cooked. The low flame subsequently transmits heat to the meat alone and the cooked rice makes it tough for the steam to escape through it. This results in cook time for meat alone and just enough heat to keep rice piping hot. Temperature regulation targets different layers separately. Hope this helps.

This is Kaccha biryani, add spices mix n marinate for 3 hours then add coriander and curd, and then add half cooked rice and put it for dum, high for 15 min and low for 15 min!

Gautam, the mutton used for Biryani is selected carefully. That is, the goat selected for Biryani weighed only 8-9kgs which will be tender. Tender meat does not require much time to cook. As you might have observed 12:30 the cooking was done on high flames which is almost sufficient for tender meat to cook. After the cooking is done on high flames, it is cooked on sim and with coal on its lid which is called dum dena (cooking from both top and bottom).
