Here we are presenting how to cook easy chicken meat rice recipe. This is our Christmas special recipe and it looks very yummy and delicious.
Ingredients

1. Chicken (Marinated) - 4kg
2. Jeeeakasala rice - 4 cups
3. Ghee - 3 tbsp
4. Oil - 2 tbsp
5. Cinnamon - 3
6. Cardamom - 4
7. Cloves - 6
8. Bay leaves - 2
9. Fennel seeds - 1 tsp
10. Cumin seeds - 1 tsp
11. Curry leaves - 2 stem
12. Garlic - 15
13. Ginger - 2 piece
14. Green chilli - 5
15. Onion - 6
16. Tomato - 2
17. Salt to taste
18. Chilli powder - 1 1/2 tbsp
19. Coriander powder - 1 1/2 tbsp
20. Turmeric powder - 1/2 tsp
21. Coriander and mint leaves - 1 cup
22. Lime juice - 2 tbsp
23. Yoghurt - 3 tbsp
24. Garam masala powder - 1 tsp
25. Black pepper powder - 3/4 tsp
26. Hot water - 5 cups
Method

Soak the rice for 20 minutes.
Keep a kadai and add some ghee and coconut oil.
Add bay leaves, cinnamon, cloves, cardamom, fennel seeds, cumin seeds and saute it.
Add ginger garlic paste and curry leaves. Saute well.
Add onion and saute till light brown.
On low flame add turmeric powder, coriander powder and chilli powder. Saute well.
Add coriander and mint leaves, lemon juice, yoghurt, garam masala powder and Black pepper powder. Mix well.
Add tomatoes. Close the lid and cook well.
When the water drains add marinated chicken to the masala. Saute and mix well.
Check the salt. Now close the lid and cook for 7 minutes on high flame.
Whe the chicken is partially cooked add the rice. Mix well. Then add hot water and add salt.
Cook until it boils. Close the lid and cook for 7 minutes on high flame and switch off the gas. Then rest for 20 minutes. After 20 minutes we can open the lid and add some coriander leaves, cashew nuts, kismis and fried onions for garnishing.
Finally our meat rice is ready to serve.
