Need to get proper tools man, cutting that very important part steerer tube crudely like that is very bad practice. Also please do measures to avoid inhaling the carbon/epoxy dust.

afaik most gravel setup go for mullet ala mtb (mixed wheel/tire sizes), with that in mind you can easily swap out your fork with wider tire clearance.. but your rear is still stuck with what like 38c or (40c slicks).
