You probably already figured it out but quick tip, you don't have to remove anything from your horse to sell/ donate it. Just go to the butcher and you can sell whatever is stashed on you and your horse.

A tip to get 3 star hides (perfect hides) find them with the tracking or binos and use the apropriate weapon for the animal. And no there is no limits on medium or small pelts but you can only carry one large pelt.
