Cake batters usually specify a long beating time so lots of air gets incorporated- the goal is a light and fluffy cake! (You might’ve been thinking of quick breads like muffins, scones, etc which you don’t want to mix very long)
@aboynamedjayy6 ай бұрын
Ehhh, not really true at all. It is likely better to whisk the eggs separately to get the air and then combine with the cake flour. You can get a denser, tough crumb if you do it too long. Granted there is less gluten in cake flour so likely the two minutes on a low speed would be fine.
@wts72736 ай бұрын

@RachhLovesLife6 ай бұрын
But with the flour that just seems like a recipe for a rock hard cake? I don't understand the science behind this :P
@leahposer6 ай бұрын
@RachhLovesLife as far as I know, boxed cakes are made with flour that has a lower protein, so unlike a cake from scratch, you don't have to worry about creating too much gluten by "over mixing." Another thing is that it aerates the eggs, the volume increases, and the cake is fluffier. Or maybe someone will correct me🤗
@MilenaPeix6 ай бұрын
I thought the same thing and never mixed enough. Next time do the full time, you’ll se how it puffs up! Cake flour with the fat added is actually hard to overmix in 2-3 mins (see recent claire video!)
@MelpomenaBovary6 ай бұрын
@@RachhLovesLifeyou were right about mixing the wet ingredients first. My mom always do cakes like that and they are amazing. That is how you you get the fluff- by incorporating air in eggs and butter because you can mix them longer and you don’t over mix the flour.
@RainbowZebraNoSpoons6 ай бұрын
@@RachhLovesLife I'm a second generation professional cake gal, overworking cakes takes longer than 2 min because the batter is very different from something like a bread dough. In general, the recommended time to beat cake batter is 3-5 min on medium speed, so the mix was actually being conservative with their 2 min recommendation. You can overwork cake mix, it's just going to take a lot longer than it would with other baked goods. The one time I overworked a cake batter it sat in my KitchenAid for 20 min because I had a newborn at the time and forgot I was baking. 😅 Mixing well for 2-5 min incorporates air into the batter and gives you a light fluffy sponge. It's the same idea as whipping up egg whites and folding them in, just fewer steps, less temperamental, and because it is done with all of the ingredients not as fluffy as something like an angel food cake.
