You can recruit offense and defense, but you can only user defense and hope you recruit offense well enough that they do good without you. You could also try to win a defensive heisman. I think you should do a rebuild where when you recruit players, they need to be on the opposite side of the ball as their listed position (I.e. you recruit a WR and he can play any defensive position, whereas a CB can only play on offense) and no athletes.
