SAIGON, VIETNAM - @MaxMcFarlin takes me off the beaten path in Saigon to two delicious Vietnamese dishes, Banh Cong and Bánh Xèo. Not only that @theroamingcook is also with me. Ho Chi Minh City is heaven for a food lover and sometimes it pays to get away from all the tourists and have an authentic Vietnamese food experience. Obviously it is easier with Max Mcfarlin because he speaks fluent Vietnamese, but don't let that put you off. Both dishes were exceptionally good. The special at this local restaurant are the sheer variety and abundance of herbs. I love it.

If you like banh cong, try to find banh khot that has a creamy consistency inside like that (a lot of the banh khot in HCMC are made like mini banh xeo where they are flat and are not creamy, so you may need Max's help to find the ones that are thicker in the middle and creamier).

BTW, say "xeo" like the word "sell", but drop off the ll sound at the end as Vietnamese words don't typically end with a hard sound (similar to French). Lots of Westerners have problems with the ng sound, the trick is to think of words that end in ng like king or sing and concentrate on how the ng sound comes out when you say that. Audrey Nguyen did a recent youtube short on this recently.

For this dish, make sure you dip heavily into the fish sauce. This is diluted fish sauce modified for this dish. Otherwise, food is very dry.

quick question. as a first timer going to VN soon, would it be safe to eat the herbs if she is spraying them with tap water?

Good question! You’ll find that in almost all cases , at least in my experience, when water is for consumption, they are using purified water that they buy in. Whether that’s water in food, sprayed , drinking water on the table. So it’s not really something I worry about at all unless I’m really rural, but even then it’s usually filtered. If it’s a good and busy place (as in has a good reputation or good reviews) chances are they aren’t poisoning their guests. I’ve been in Asia a year and not really worried about it at all.
