As an Italian from Brooklyn NY...I have always judged Italian restaurants as good or not based on their chicken cutlet parm....if that dish is good...then the rest of their food is usually good too. Italian restaurants HAVE to get that 'staple' dish right if they want to be considered good and authentic. It's kind of an unwritten rule...lol but it's true!
