You both did a fusion style dish. Presentationwise, when I think of poutin I think of ravaging my food, getting all messy while enjoying the fries either by myself or with friends. I think OniGiri's dish delivers that perfectly. PK's dish looks incredible and super fancy, but I feel like that takes away from the poutine... kinda like the stuff Tsubasa would make now that I think about it. Creativitywise, Imma have to go with PK, using mole instead of gravy was a superb idea and pairing that with quesillo, I can already tell it must be good, also giving the french fry more body was a great idea, all in all a deconstructed poutine is fantastic. OniGiri on the otherside, despite making it a Korean fusion, it still looks and feels like a traditional poutine. So I'll give that point to PK. Flavourwise, while I'm still going to prepare both dishes, I'll throw in a wild guess and say PK's tastes better: mole and quesillo are already a top tier combo and although his dish is more simple and refined, I bet the green bits and the texture of having a massive potato help out as well, however this might be a double edged sword as perhaps more potato means less flavour of everything else. On the other hand, while OniGiri's dish might be a bit more explosive in flavour (more combinations), the fact that she used Tex Mex cheese, makes me think it'll taste like nachos instead, and not the flavour one would associate with poutine. Specifically, too much flavour might also be bad since it wouldn't have a defined profile. Thus, while Imma leave this point to be contested after I try out both, I am leaning more towards PK's dish. In other words, I think PK made the Nikumi mistake, however, seeing how Nikumi's dish beat Yukihira's irl (as he showed in one of his videos) this might have been good for him.

I'm no Canadian, but I have to say that's the most gourmet style poutine I have ever seen. Is it a poutine? It has potatoes, cheese and gravy, the basic components of one so that's a yes in my book. Now off to watch OniGiri's.

Gourmet fusion poutine plate-up! Very into it. Love how the use of mole introduces all sorts of fruit and vegetable flavors. Just include some cocoa, and you could get to joke that it's chocolate gravy poutine. My suggestions would be to give the cheese a saganaki-like treatment (similar to what you did with the blow-torch sear, but a slight bit more of a crust), and then maybe have the garnish be a grated pickle of some kind (ginger? onion? daikon? maybe just marinate green onion/chive/leek?), to provide just a flash of acid (again akin to saganaki). Otherwise, a "full transformation of form" poutine would be, like, potato-crust cheesesticks with a gravy core lol. Or, like, potato-mochi-peel gravy soup dumpling in fondue!

ChefPK, you should REALLY try and link up with Josh Sherer, from Mythical Kitchen. You 2 are some of the most innovative/outlandish cooks I have seen. The battle would be on Legendary status. Also amazing work as always, Keep playing with your food.

The main difference between poutine and disco fries is the cheese. Cheddar or mozzarella cheese is fully melted over the heap of disco fries, unlike the cheese curds in poutine, which melt and soften, but remain whole and add a lot of chewy texture to the dish. However I was making a funny at the expense of New Jersey.

Traditional - French fries, beef gravy and cheese cards. No garnish, but personally I like the creativity people can bring to the table with it with custom add ons, garnishes and variations. Long story short, just have fun making poutines!

ure nuts. i love watching you cook. it's always so inspiring. every time you upload i feel like going into the kitchen and only leaving 8 hours later after i've perfected some stupid invention. it's fun to see how you went vinegar route to maintain the integrity of the potato while she went with baking soda to rough up their texture and get more browning area, thus making them crispier. i love these battles.

I mean, poutine is fries, cheese and gravy, so I saw all key components present. If anything, many restaurants have been trying to upscale poutine for a while and I suppose your version has peculiar presentation, but as an appetizer it looks pretty cool. Oh and for you question on the green onions, I've seen tons of poutine with green onions and sesame seeds sprinkled over (granted they tend to get lost in the gravy pretty quick), but yeah it's not weird, don't worry.

Having made both recipes I can indeed say PKs tastes better. While the thick fry leaves a bit to desire of flavour (more potato flavour) it still retains what one would hope from a poutine. As I expected, Oni’s was a bit too much and tasted a lot like nachos, except instead of the corn chip you get that french fry. While this is not bad, it’s not what I expect from poutine. More so, while I understand both dishes are fusion, I feel like with Oni’s I might as well had had nachos and I could have experienced the same flavour. Whereas with PKs I can’t think of anything similar save from actual poutine and this is not it. Which leads me to the conclusion that PK should get this point. All in all for me it’s a win for PK. I’d still need 2 more people to give a detailed verdict to honor the Shokugeki. But for me, my vote goes to PK.

Chef PK making me be like the side characters/judges with his dish. "That's not poutine?! He's going to be disqualified for not following the theme!" I could be just stupid but my brain thinks melted cheese and gravy covered fries in a pot when I hear poutine.

as an islander, i would like to see a poutine using taro leaves and stems. still, any food that is basically starch with some kind of sauce i have great difficulty in saying no to. loved the vid.

I'm from upstate new york, so I think that pretty much makes me an expert on poutine. This right here, is probably poutine. I kinda want to try it two ways, the nicely presented, carefully laid out way you pulled off here, and then try and go for a messy "just kinda a mound of fries and sauce and cheese" style. I think it'd work both ways, but I'm curious if the flavors and textures would overpower each other.

Comparing ChefPK's dish and Onigiri's it kind of gives me Rentaro v.s. Kurokiba vibes since one dish looks nicely plated while the other looks like a big stack of food

Yay! I get to be judgy on the internet! Preparation: Onigiri Had to give her the W on this point. Chef PK made a mole which he admits took him 3 hours to build. if included in his original cook time, he's way over. Onigiri did everything on the spot, which is more in the spirit of a shokugeki. One could debate that this could disqualify his dish entirely, but since mole sauces can be bought in a store it could also be created with a prepared mole and be similar in quality. But this is all in fun, so we blaze forward. Flavors: Chef PK Both built a very solid sauce. Neither did a "gravy", but the flavors Chef PK brought to the party were a bit more layered and varied. Chef PK did a single fry rather than a double fry which Onigiri did, so the crisp on his fries will be a little less. Both used russets, so not much difference there. Chef PK also got a proper squeaky cheese, vs the tex-mex used in Onigiri's. So on the technicals, Chef PK gets this point. His potatoes are less crispy, but the cheese is more authentic to the style of the dish. Presentation: Chef PK Onigiri's dish looks like a traditional poutine with chicken added. Which is more a Megumi dish compared to the Yukihima dish Chef PK put up. Pretentious, sure. But the style was there and Chef PK's dish could be put in a fancy restaurant with a 18 buck price tag. Onigiri's dish would be very well received, but Chef PKs is the prettier plate. Creativity: Chef PK It's that tex-mex cheese that throws it off for me. Both are creative spins on a traditional canadian dish, and both are very well themed to their origin. Except for Onigiri's dish, with that last-minute american-mexican hybrid cheese on top of a perfectly themed korean-canadian dish. Could've done a chicken galbi with cheese curds and fried potatoes, but didn't get that. Chef PK stuck to the flavor profiles of his hybrid country to the core, leading to a much more harmonious dish. Winner: Chef PK At the end of the day, you get judged on a bite of food and how the plate looks. If I were going out to eat, I would want Chef PK's dish. Both are great dishes, but if we're talking about taste, presentation, and creativity, the win is easily his.

even in the actual show though, plenty of contestants used pre-prepared sauces and what not, like in the curry battle, the fermenting girl used home fermented ingredients. So making the mole the day before doesnt seem to be grounds for disqualification

OniGiri definitely won this one. Not only was her dish more true to the concept of poutine, but I feel like using that Mole was super cheating. OniGiri hand made her sauce, and her "secret ingredient" was much more Soma inclined with the sprite and baking powder. I would much rather eat yours, but for the competition criteria, OniGiri came out on top. Over all, a great match.

I think it looks really professional and delicious, but I think Giri’s poutine is more of a proper poutine. I think poutine is supposed to be messy, supposed to be a pile, and her spicy poutine is all of that in a very creative way. Yours is too clean, to professional. I think I would personally prefer eating yours, as I’m not a fan of spicy foods, but I think Giri won the Poutine challenge. Also, I think it’s rather cheating to introduce the Molè as a secret ingredient, making that should have been a part of the timer and challenge, Giri made her whole sauce, which was arguably more complex and difficult, during the timer. She gets bonus points for doing that. Claiming that you beat the timer by 45 minutes by pre-making the most difficult part ahead of time is just silly.

Hey Chef, it's Vinton! Poutine's usually have colors ranging from yellow to brown (maybe golden to brown), but restaurants make things fancy with their interpretations, so it's all good! As long as you have fries, Cheese Curds and Gravy ;D

Actually, now that I think about it, some fast food places have "Italian Poutine" which is a meat sauce over fries and cheese curds....so I guess you just need the fries and cheese and you pick a sauce

You know what this reminds me of? I was blasted and hammered at one time and got poutine, I ate it by taking 2 fries at one time with a curd, putting it on a plate and then eating it. I imagine this would taste better than what I had

The dish looks (and I imagine also tastes) stunning, but I feel that having the mole pre-prepared is a bit of a cheat. It was supposed be done in 90 minutes from start to finish, and the mole took 3 extra hours that went uncounted. Taking that into account I think Giri wins by default lol
