Gluten free wouldn't dissolve in water. I think she just needed xanthan gum to make it hold together better. Xanthan gum is a life saver for gluten free foods. My hubby of 10 years is celiac and I have had to learn how to cook/bake gluten free. Rice flour makes the most crispy, light and delicious fried chicken btw, no xanthan gum needed.

@Asteri En I don't think it's because gluten-free flour can't dissolve in water; gluten-free flour doesn't form gluten strands, which means it has zero elasticity and won't hold together properly. Xanthan gum is, if I remember correctly, a binder used to thicken foods. It helps bind everything together and keep it from falling apart.

I am NOT a cook, I know just about nothing about nothing, but I have a wonderful friend with Celiac who invited me to her family's Thanksgiving because my family lives far away... and maybe the restaurant they ordered from didn't know about xanthan gum? Because just about every bread item I put in my mouth that day turned into dust immediately. (Obviously, I was very appreciative and complimentary, because I'm a grown woman getting cooked Thanksgiving by someone else - I am very lucky! But it made me a little sad. I know my friend struggles sticking to the diet, and it helped me see why, but gluten makes her so sick.)

@@ILuvAyeAye Xanthan gum doesn’t do anything for the flavor, but the fact that the bread items were bread before you put them in your mouth means it was probably in there. Some of the big brands have started to come up with formulas of flours and additives that can make gluten free food less sandy tasting, but home or most restaurant cooking still leans heavily towards the sand. Especially when using rice flour, which inexplicably is the most common option even though it’s the most sandy. (I am not gluten free now but I was for two years as a child - 20 years ago before the craze - and hated every minute. My dad is gluten free now and I will occasionally eat his food, accidentally or on purpose, so I’ve had the opportunity to see how things have changed… or sometimes not.)

No, not really. Eight fluid ounces is a cup, and that's for dry ingredients. A dry ounce can only be measured by weight. You can convert for an approximate amount, and that's usually good enough if you already know what you're doing and how to adjust your proportions as you go based on results, but if you don't... Better to weigh.
