Fascinating!! Great program. Great content and storytelling. I researched this industry 15 years ago. There are serious shrimp growers in Indiana, of all places. The man I first visited was named Bill Blythe. He used the same method but not as advanced and refined as this method. They called their water, golden water. They cultured their biofloc water themselves, no algae. Believe it or not, they used $300 above ground Walmart swimming pools. Farmers were producing pacific white, sashimi grade shrimp. Hopefully, this method of aquaculture will catch on and be a scalable alternative.

Great video! That density (texture) difference is likely just due to frozen vs never frozen. Ice shreds cells from the inside, like little knives, when it forms, even with flash freezing. So, frozen meats will tend to be more tender. You can think of ice formation as similar to a mechanical tenderizing process, especially for lighter meats like fish and shrimp.

I really loved this video. I really appreciated the fact that you showed the water treatment process. I work for my county as an apprentice at the water treatment plant and a lot of what was mentioned is stuff that I had learned. I never went to college for water treatment so i'm learning it by doing it. A lot of the processes shown are the exact thing that we would do to make potable water (drinking water). They're not super far off from making actual drinking water with the setup that they have. The process of taking raw water and adding chemicals and bringing it to a level to which humans can consume is amazing. My plant uses an older Ca(oh)2 or lime process to clean the water and it takes a lot of work to balance the chemicals just right so they we don't over due it and make people sick or under due it and make people sick. Very cool video on the water treatment and the life cycle of shrimp. They do look yummy!
