Yo if you want to make flan, I have a good recipe: 1. Brown white sugar until it’s a brown liquid Then add it to the bottom of your flan cups 2. Add these ingredients into a bowl pinch of salt lemon juice 5 teaspoons of vanilla extract sweet and condensed milks a cup of sugar and 3/4 of water 4 eggs(3 yolks and one whole egg) 1.25 cups of milk This will be your cream, add it into the flan cup and cook in a hot water bath. Let it cool and flip. Then enjoy. (I like it warm but it’s supposed to be cooled in the fridge)

Plenty of non-japanese companies do that (e.g. Wicked Sister). In Australia they're sold under "creme caramel" and the reason why it works like that is because the "top" is actually the caramelised "bottom" and would often have a syrup at the bottom because the intention is that you flip it upside down and the syrup coats the dessert. In other words, the pudding is often sold upside down.

@mist8814 can you get out of here wirh the condescending attitude please because it is in fact actually called purin aka pudding, because that is just the Japanese word for this fucking dessert (and the Japanese version tastes slightly different the same way creme caramel and flan taste slightly different because of regional differences in the recipe that tend to go hand in hand with regional differences in the name) flan is the Spanish and American name for it, the French and English word is creme caramel, the Japanese word is purin. Not flan, flan is tangy because different ingredients are added that are not in purin. Closer to creme caramel, it's a classic "western style" sweet but as with all Japanese "western style" sweets the recipe is adjusted to the Japanese palette, it's a very subtle, light flavour, unlike the richness and stronger flavour most westerners prefer.
