Just wanna say, part of the reason there was some trouble with the chocolate is it wasn't in temper. You said it was pre-tempered, but chocolate is only in temper at specific temperatures and using agitation. Microwaving can melt it, but it won't put it in temper. Once it leaves temper it has to be put back into temper by heat and agitation to re-align the strands and actually put it in temper. You can tell it wasn't in temper because tempered chocolate tends to have a sheen (though some of that would be lost with the silicone) and a nice snap which it didn't seem yours quite did. Not knocking it, just saying that was likely part of the issue with it not holding up initially as proper tempering does build some stability (which is why filled truffles tend to hold up well still even with such a thin coating).
