Ice isn't "not bouncy". It's a brittle crystalline structure that will deform/break under high pressure (which disperses the momentum, reducing the "bounce"), but since you don't have the cube breaking it doesn't make sense to have it absorbing bounce. Now if you made a hacky sack or something? That would be cool to apply low bounce to.
