RECIPE (6 servings, 30min prep time):
-400g fine bulgur
-2/3 cup (150ml) tomato sauce
-1 1/4 cup (300ml) water
-4 Tbsp tomato paste
-2 Tbsp pepper paste
-1 1/2 Tbsp chili powder
-1 Tsp cumin
-1 1/2 Tsp salt
Heat up the water and tomato sauce.
Mix with the remaining ingredients and let it sit for 20mins.
-1 onion
-2 cloves garlic
-1/2 bunch parsley
Finely chop everything
-2 Tbsp pomegranate syrup
-2 Tbsp olive oil
Add to the bulgur mix and knead really well for 5 mins.
Shape into Çiğ Köfte and serve with lettuce, lemon juice and pomegranate syrup.

aaaah çiğköfte! for anyone that wants to make this, i recommend using more tomato paste than red pepper paste (it tastes better that way tbh) :)

A tip from someone makes this everyday at a restaurant: You can try putting tomatoes onions and garlic in a food processor until they're a soft puree, and use it instead what you did with water. It still looks amazing and better than any foreign version I've seen ^^ (And I think corn oil goes better with it than olive oil)

​@@marvin2678 if you mean for kneading, that's usually when you're making it in big batches so if you're not making a lot you can just do it quicker

That's what confuses me, too. All bulgurs I ever bought definitely needed to be cooked, not soaked. I suspect it might be kuskus, which is actually tiny pasta, it doesn't need real cooking, buuut you should pour hot water over it and after few minutes it's ready to eat / use. Maybe this is some special kind? But why then no one in this comment section mentions it?

I soak fine bulgur in warm water for 20 min, than add other ingredients in bulgur, should not be watery.

I mean looks ''cok guzel '' indeed but this is more like a mashed ''Kisir'' and not cig kofte . Ingredients might be almost the same but cig kofte neads alot of kneading .

as a turkish, it's intense kısır but not çiğköfte. çiğköfte process is way more different and difficult, çiğköfte needs to be more intense and firm than you made which basically called hot lokum in Türkiye lmao

Its not turkish, cigköfte comes from the kurds but turks love it to call food from difficult cultures turkish food. Like greek food, turks call greek food turkish to but actually its not.

I got rid of explaining this everytime to people who thinks like you but We all came from Ottoman Empire! Of course our foods will be similar but this is a represent thing. Turks used to love Çiğköfte more and did it more, they represented it better and now Çiğköfte is Turkish. Meanwhile Falafel is Arab and Tzakziki is Greek. We all came from the same Empire. Like how Greek and region Aegean may have similar foods, all of them may!

Some vegans are vegans for environmental purposes or animals not because they hated the taste of meat, and some for health issues , their are many types so it isn’t weird that some do try to replicate meat flavors. P.s. I’m not vegan this just what I learned from following a bunch of vegans because to fun to see other types of food to me

Traditionally this dish is made as she do, the only difference is that we add also ground meat in it you idiot. This dish is not originally a vegan dish but you can veganise it like she did. The appearence is not related to meat, the reason it looks like meat is that we add a lot of different seasoning which make it brownish red.

the meat variant has been banned in 2008 because the raw meat was potentially harmful for your health. thats why and how this variant came to play.
