The meat up top had contact with trapped air while the meat on the bottom was preserved by the vinegar and the air never touched it.

I would guess something like the vinegar pulling fat from the meat, and the meat absorbing the water from the vinegar causing some type of seperation with the vinegar on the top half and the fatty substance on the bottom

I think the higher fat content is up at the top, the vinegar most likely destroyed the fat molecules, making space in between the grain of meat and the exposed areas and since it's at the top of the jar where gas is collecting. Most likely aged the meat in some way? While the other pieces towards the bottom have little to no fat content so they then are preserved? idk that's my best guess.

I think it had more to do with that he put the meat in first and it was compressed enough at the bottom of the jar that the vinegar just got to the top pieces, but didn't get to the bottom ones. If it would have been mixed or had less meat in it then all the pieces would have been the same.

When preserving anything it’s necessary to remove all of the air from the container you are preserving in. Otherwise you will get bacteria and have spoilage with anything that comes in contact with the air. The spoilage will spread over time. The fact that you had the meat in vinegar decreased the time of spoilage. There’s a whole process to caning food.

With regards to the pickles - pickled cucumbers need more than just vinegar - the process is about right, it actually takes less time than 30 days to make them (on average, actually only about a week), but you need to shake them every day, and add salt and sugar (plus whatever extra herbs and spices you want to give a bit of extra flavour).

That would be dangerous and/or expensive. Can't keep liquid nitrogen in an enclosed container, would evaporate and cause a high pressure hazard. It would be expensive because he would constantly have to refill the nitrogen

Think with the meat all the blood got dense for top portion and went to the bottom and most of the meat absorbed it on the bottom because no where to go but the top didn't have any blood so pretty much the top meat osmosis the vinegar, took out most blood and rest sunk leaving top just colorless and such, so bottom just ended up getting a lot of it and absorbing as much as it could.

Tyler, the reason behind the meat turning brown at the top is die to the vinegar pulling all the water out of the meat, the water rose to the top. water contains oxygen and there for it turned the meat brown just like how meat that's been left out to long turns brown.
