1 onion, diced
2 cloves of garlic, minced
1 red bell pepper, diced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 can (14.5 oz) diced tomatoes
4 large eggs
Fresh parsley or cilantro, for garnish
Lunch - Grilled Chicken and Watermelon Salad
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
Salt and pepper
4 boneless, skinless chicken breasts
4 cups watermelon, cut into bite-sized chunks
1/2 cup crumbled feta cheese
1/4 cup chopped fresh mint
1/4 cup chopped fresh basil
Dinner - Pan-Seared Duck Breast
2 duck breasts
Salt and pepper
2 cups mixed berries (raspberries, blueberries, blackberries, etc.)
1/4 cup sugar
2 tbsp balsamic vinegar
1 tbsp cornstarch
1 lb mixed carrots, peeled and diced
1 tbsp olive oil
1 tbsp butter
