4.ಇಡ್ಲಿ ದೋಸೆ ಚಪಾತಿ ರೊಟ್ಟಿ ಅನ್ನ ಎಲ್ಲದಕ್ಕೂ ಸೂಪರ್ ಈರುಳ್ಳಿ ಗೊಜ್ಜು|Onion Gojju |Onion Thokku|Erulli Chutney

Ingredients:
Oil - 2 Tbsp
Mustard Seeds - 1 Tbsp
Coriander Seeds - 1 Tbsp
Jeera - 1/2 Tbsp
Urad Dal - 1.5 Tbsp
Red Chilli - 10 Nos.
Tamarind - Big Gooseberry Size
Curry Leaves - 10 Nos.
Hing - 1/4 Tbsp
Methi Leaves - 1 Bunch(Only Fresh Leaves)
Tumeric Powder - 1/4 Tbsp
Jaggery - Small Gosseberry Size
Salt To Taste
Seasoning(Oil, Mustard Seeds, Red Chilli,Curry Leaves)
Steps:
1: Take a buch of fresh methi leaves, take only fresh leaves, discard stem part
clean and wash it. Let the water drain completly
2: In a Kadai, add 2 tbsp of oil
Add mustard seeds, jeera, coriander seeds
Roast it nicely till slightly color changes and mustard seeds splutter
Now add urad dal , roast it
add red chillies and roast it till color changes
To this add, tarmarind and curry leaves
roast till color changes and aromatic
and finally add hing and roast it for few seconds and keep it aside
3. In the same kadai, add 1 tbsp of oil
When the oil is slightly warm , add turmeric pwoder and immediately add fresh methi leaves
to avoid discoloration of tumeric leaves
roast it till completely shrinks
it takes few seconds
after that add jaggery and salt to taste
and roast again for few minutes so that water content is completely reduces
Keep it aside
4. Grind the step 2 roasted ingredients first without adding water
and add step 3 ingredients and make it to coarse paste(try not adding extra water)
5. Ready the seasoning with oil, mustard seeds, red chilli, curry leaves
6. Add the seasoning on the grinded gojju and mix it well
7. This gojju can be stored in fridge upto 15 days
8. Goes well with idli, dosa, chapathi and rice. Using this you can prepare methi rice in few minutes
