I... Love.... Oblivion! As far as quest goes, best variety of any elder scrolls game. Dark Brotherhood actually had real quests and secret assassinations, not just "go kill person X in dungeon Y" Mage Guild had real magic requirements and Theives Guild had really cool and complex heists. The uncanny valley dialogue just makes it that much more memorable
