In this video, I’m finally wrapping up the Wild Grape series by making a batch of homemade wild grape jelly! A couple of weeks ago, we harvested wild grapes from our property, and I juiced them using my steam juicer. Today, I'll walk you through the jelly-making process, sharing tips and tricks along the way, especially on how to avoid those dreaded grape jelly spills!
For this recipe, I used 5 cups of strained wild grape juice, one package of Sure-Jell pectin, and 7 cups of sugar, which made about 4 to 5 pints of jelly. Start by pouring the grape juice into a heavy-bottomed pot-I used an enameled cast iron pot to prevent the juice from burning. Add the pectin, whisk it in, and bring the mixture to a full rolling boil over high heat. Once boiling, stir constantly for one minute, then add the sugar. Keep stirring until the sugar dissolves and the mixture returns to a rolling boil. Boil for another minute, then remove from heat.
After boiling, skim off any foam, then pour the jelly into sterilized jars, leaving about 1/4 inch of headspace. I processed mine in a steam canner for 10 minutes. The result is a beautifully rich and mild Michigan wild grape jelly, perfect for spreading on toast or giving as gifts.
This process can be a bit chaotic, and I even had a spill during filming, so make sure to keep an eye on your jelly as it cooks! Rachel, I use oven cleaner on the stove top. It's perfectly safe for an enameled top, which yours looks like. I spray it on, leave a few hours, and wipe it all off.

I purchased a large stainless steel pan that I use when doing a lot of canning. It was a bit pricey, but I have really enjoyed using it. It’s called a Maslin pot. I think it is a 9 qt.

Rachel. If making jams and jellies, I always put kitchen foil on my stove first, I cut a hole for the burner, this helps a great deal to keep the stove top clean. I'm in the UK

That jelly looks so yummy! Im waiting for my concords to finish ripening! I had a juice spillover on my stove awhile back, it surprised me how well it cleaned up with "Awsome" cleaner. I sprayed the area and put a wet rag on top. It cleaned up great! My stove top is white, too.

I always try to use a tall high pot when making jelly and I have an electric stove with a glass top so when it starts to boil over or try to boil over I just scooted off the heat and then put it back on. Sorry you had to deal with that mess.

Love that you show the realities of making jelly. My kids always gobbled up the foam! Your bread looks amazing! I have 2 hints for you. Put a little cinnamon in your grape jelly for spiced grape jelly, it takes it over the top! When I have overflows of jelly or syrup like that, I immediately pour a small amount of boiling hot water over it and then let it cool a little before cleaning. I have sealed burners like yours and it works well.

When you have anything burned on your stove, run warm water with dish soap. Dip fabric softener sheets in the water and lay them on the spot. Keep it moist. When you go to scrub it off, it will be much easier

Rachel, I always put a couple of layers of foil on my stovetop when I have a day of cooking, it makes cleaning up so much easier at the end of the day.

Jelly and breads look so delicious Rachel. Hope the stove top didn't get ruined. Looks like my enamel stove top. I don't know if what my mom used to do to avoid fudge boiling over. She coated butter around the top edge of pot 1 inch.

Birds like grape jelly, and at least someone gets to enjoy the spillage. That full rolling boil is so necessary for jams and jelly but the boil over is a little scary. Thanks for sharing the reality of life.

Your bread looks amazing! I am quite fearful of getting burned while jelly making. I use a heavy bottom pan three times the size of the actual liquid. Your jelly looks fabulous!

Looks amazing! Do you have a larger heavy bottom pot you could use. I spilled some sugar water on me one time, I was reaching over the kitchen sink, went to move the hot pot I had on the window sill to cool, bumped it and it splashed on me. Thank Goodness my husband was close by because he had to take my rings off, then we made a trip to the ER. So please be careful, I love your channel Rachel

I had the same thing happen to me the first time I made strawberry jelly. It boiled over and actually caught fire on my electric stove. Thankfully it was easily put out.

7:54 you can also add a little bit of butter to help with the foaming. I throw in a knob and never have to deal with foam.

I have a electric kettle, and I'd advise to have boiling water ready for such occasions. The water will keep the jelly from setting and loosen up the cooked on bits. Follow with oven cleaner.

Omg. I need a short of you saying “if you’ve ever done two batches of jelly at one time, it’s chaotic!” So I can send that clip to my hubby!! 😂. I just did 3 batches of plum jam from frozen bags of fruit my hubby was complaining were in his way! I get really controlling about my kitchen when I’m canning - don’t splash water on my jars or equipment! I’m fully occupied!!!

I wish I had a tip for you for the stove😏 I did find a product at Meijer in the place where mops are...where they stock more obscure products (not necessarily the national brand things). I can't remember the name now...was a dark gray bottle with black. It is for cleaning hard blackened baked on things from stove top. It did a pretty good job.

My mom used to add a half tsp. of butter to help keep it from boiling over. It might cut down on the foam too. But my dad always loved having the foam on bread right after she did jelly. Waste not 😂

What is the capacity of your pan? It looks rather full before the sugared mix begins to boil. You need adequate space for it to expand when boiling. Try a deep sided pan especially for grape jelly since that is the fruit you typically boil over.

Rachael, I have that same stove and have that same problem with that eye. On mine it is the biggest and hottest burner. What I have done that works pretty well to clean up those kinds of messes is to clean up as much as I can with whatever, spatula, rag or Paper towels. Then I have the scotchbrite scrubbies, the green ones they don't scratch the finish, and I'll use that. If there is still some burnt on gunk I just pour a little water with a bit of white vinegar right on the gunk and let it sit. May take a couple of times but it usually works.

I just made 20 jars of wild grape jelly couple weeks ago! got the grapes from the side of the road, got about 30 lbs! gave us 30 cups of juice. so the rest is turning itself into wine.

That boil over happened to me also with grape jelly years ago. I've scrubbed it with steel wool, sprayed it with every oven cleaner, went at it with razer blades, you name it. The remnants are still with me. 🤦‍♀️🤷‍♀️

Im not sure what you were using to scrub with but I have found that a little dish soap and borax works very well! Everything looks amazing! We all have one of those events we are living with years later lol mine was a batch of divinity candy..my mixer went a little crazy and it never would come off of my cabinet door!🤣

Thanks for sharing the real deal it’s not easy to put food up …just an observation I know you use a plastic whisk so it’s quieter on the video but my granny always added a stainless steel spoon to a boiling roll to help quiet down a boiling mixture..I wonder if that woujd have helped ..love your adventures

When I try cleaning cooked on grease, jelly, syrups, etc? First clean, of course. Then I soak the area that needs help, with home made citrus peal vinegar. If it's only new, that will handle it, with a bit of elbow effort! If not I soak with drenched cloth for long time. I have seen video to get super clean? Use tooth brush and toothpaste? I have not tried that. Over all? I can get hard water scale, etc Off with the Citrus! I pack my jar FILL of peals and add vinegar to cover and age it for a month. Super citrus cleaner. It is more like a Citrus Extract! And? NEVER underrate Rain Water for Descaling! It can take off super crusted kettles inside, sparkling Clean! I have done it! ❤

I use a non reactive metal pot instead of ceramic coated cast iron. The metal pot reacts quicker to a reduction in heat than the cast iron.

I love watching your videos! I have soooo many wild grapes in my hedgerow and i would love to can them... but how do i know if they are safe and not the Toxic kind of wild grape?

I cover my wild grapes with water and boil, and mash with the potato masher. Then strain. Or sometimes I will cook them in a pillow case (bought new for that purpose) The jelly packs a fruity punch. I would think more so, than steam juiced. And I end up with Gallons of juice from about the amount you cooked. I was raised with an electric stove. And have always used an electric stove. (except at granny's house and I hated cooking with gas because it was so much hotter than electric) lol Sorry you had that happen. I've been lucky, never in my 40 years of jelly making have I had any boil over. knock on wood lol Another thought, it may be partly because of the heavy (looks like cast iron) pan you used, staying hot even when you turn the burner down. I use a stainless steel pot for jelly making.

I know that you are not a fan of chemicals but Easy Off oven cleaner (then cover with plastic for an hour), then wipe it off. This would clean all the burnt sugars...And possibly even clean off your past burnt jellys.

Have you tried baking soda mixed with oil? Smoother that jam with the mixture wait 24 hours and it should literally wipe off with a wet rag.

Just fyi I harvest wild mustang and it’s so simple to just cook them for a couple minutes and use a hand food mill to separate the peel and seeds from the juice. I’ll be dehydrating these for supplement use, but I then take the juice (after it’s refrigerated for a day and some pulp has settled) my ratio is 1:1 juice/sugar and no pectin. Any more sugar and it would be too sweet. I like to pass this on as it costs less(no pectin) and is less sugar.

OMyGod! Rachel. This was the most amazing jelly ever. The bread looks amazing as well. But, you hae to be very careful when making jelly. It can over boil and someone can get hurt. Even you my friend. Try to put the jelly at medium low and whisk until you can do nomore. It could keep it from over boiliing. I am just trying to help. God Bless you Rachel. The jelly looks good, but what a mess, bet it tastes great and very worth the effort. I have to make Amish Cinnamon bread, and plain white bread today. One of each is for an order I got, and the other set, is for my house.

You're lucky that it was an electric stove, tge level doesn't go down fast at all. You would have to tey to remove the pot from the burner.
