From culinary school i've learned that bigger equals less quality. Now when It comes to sweets it's different, especially with chocolate. As long as you keep the ratio and temperature of chocolate to the other ingredients It turns out great anyways, because temperate chocolate doesn't rely on seasoning or a certain cooking method.
