Not sure if you will read this but I hope you will! Instead of pressing drift+direction at the same time, press the drift button and then after you land press the direction. This helps build mini turbos faster and allow for better turns, this is hard to get used to but allows for much faster laps! Hopes this helps you not suck at Mario kart!

4:10 The problem is the game is designed so Lakitu saves you when you fall off, so when you drive backwards on that track, the game thinks you fell off and spawns Lakitu
