I Made Homemade Dumplings From Scratch

One of my go to comfort foods, and my favorite recipe of all time. Dumplings! That you can also make into potstickers. The perfect balance of flavor in each bite, and so incredibly juicy. I've made these so many times throughout the years because of how often I crave them, and now hopefully you can too!

Ingredients:
500g ground pork
3 tbsp water
1 tsp salt
3 slices ginger
1 tbsp rice wine
4 tbsp soy sauce 1 tbsp sugar
1 tbsp sesame oil
1 tsp white pepper
3 stalks of scallions
1 bunch chopped cilantro
500g cabbage
Steps:
1. Add salt to ground pork. Add water one tablespoon at a time, stirring in clockwise direction until completely absorbed into the meat, with a stickier texture.
2. Add ginger, rice wine, soy sauce, sugar, sesame oil and white pepper to pork. Stir to combine. Add in chopped scallions and cilantro, and let rest for at least 10 - 15 minutes.
3. Add in finely chopped cabbage and stir to combine.
4. Add around one tbsp of filling to the center of a dumpling wrapper. Lightly coat the outside ring of the wrapper with water. Fold the wrapper over the filling and pleat the edges to seal. Then repeat with the remaining filling and wrappers.
5. To pan-fry dumplings, add 2 tsp oil to a shallow pan on medium heat and place dumplings in evenly.
6. Once the bottom of dumplings are golden brown, add in 1/2 cup water and cover with lid to let steam until water has evaporated. Remove the lid and keep the pan on the stovetop until the bottom forms a nice crisp again.
7. Remove dumplings from pan and transfer upside down onto a serving plate.
This should make around 40 - 50 pieces, depending on how big you want to make them...

Thank you for the great recipe! I tried making the dumplings, dough from scratch too :) note to others who might also make the dough from scratch, keep in mind 1 batch of dough isn't enough. I made 2 batches of dough, each dumpling's wrapper is 15g. It made 60 dumplings and tasted amazing :) so happy to have found this recipe, much love 🥰

I'm Taiwanese too! My mom says the exact same thing about being able to smell how salty the meat will be lol. We pretty much do the same in my household but we'll also add five spice, finely diced carrots, and occasionally ground shrimp to our 水餃. Then we would spend the entire Saturday after a trip to the Chinese market making them. When I was younger my dumplings were always 醜 but they tasted good at least! Thank you for all these Taiwanese recipes definitely makes me miss my mother's cooking and Taiwan!

My wife and I made these with our kids over Christmas break, and it will end up being a new family tradition. The flavor was seriously as good as any I've ever had. Our folding skills suck though, lol.

I made it for supper tonight. Did a half size (about 30 finished) and my parents and me ate it all. So good. Only thing i didnt put in was cilantro cause my mom dislikes it. Going to make again cause it was so easy to do. Maybe next time ill take pictures before we eat them all

If you make homemade dough and you don’t care to have the center thicker when you roll it out, you can use a pasta maker (they will be almost like the store bought wrappers) and something to cut out the shape you want.

I used to work at my uncle's restaurant as a dish washer. He wanted me to help wrap some Korean mandu (different filling, but wrapping is the same), so he tried to show me how to do it. I was so bad that he kicked me out of the wrapping group to go work on something else. I finally figured out how to do the pleating when I learned how to do origami many years later

Dumplings are the thing I miss most that my Grandmother/Mother used to make. I wish I had learned from them how to make them. I have since tried some recipes but it is never quiet the same. Thank you for sharing your family recipe. I will definitely give this a try. Wrapping was always such a chore, and I could never get the pleats right. This video brought back fond memories.

This recipe is amazing. I made half a batch one day and the rest the next day and they turned out fine. I love how there is a lot of cabbage as I think it helps evenly cook the filling more efficiently than just meat and seasonings. The only trouble I had was the flour and water mixture, when it fully cooked it was difficult to take the dumplings off the pan, but a metal spatula and momentum worked well. I'd recommend a Teflon pan, but otherwise if you don't mind a little bit of elbow grease a non-teflon pan will be fine.

I used to help make dumplings when I was probably 8 or maybe younger. And I think I was pretty good even if I kept making them into weird shapes. A few years later I tried making them again and I couldn't remember how to fold it, lol, then I figured it out. So I think I'm decent now. It's always fun watching other people make it though!!

Most people don't know this but India has dumplings which is sweet with coconut, peanuts, sesame seeds, jaggery or sugar as filling and a rice dough as wrapper

Hi Inga! Admittedly I'm an on/off viewer here but just wanted to let you know I came across an ad from Facebook Watch (on FB itself) on my timeline that featured you in it for the first couple of seconds. They were pushing the idea of "inspo" and encouraging people to make inspo happen for themselves and it showed you in the Tasty kitchen smiling while doing a "cheese pull" for the camera but instead it was a "sauce pull" with a spoon from a bowl.
