The dish starts with preparing the koftas, which are made from minced meat (usually beef, lamb, or chicken) mixed with spices such as garam masala, cumin, coriander, and chilli powder. The mixture is shaped into small balls and either fried or baked until golden brown.
Next, the pulao is prepared by sautéing onions, garlic, and ginger in ghee or oil until soft and fragrant. Whole spices like cinnamon, cardamom, cloves, and bay leaves are added for depth of flavour. Basmati rice is then added and lightly toasted before being cooked in a mixture of water or broth with saffron or turmeric for colour.
Once the rice is nearly cooked, the koftas are gently placed on top, allowing their flavours to infuse into the pulao as it finishes cooking. The result is a beautifully layered dish with tender koftas nestled in a bed of aromatic rice, perfect for a special occasion or a comforting meal at home.
