You, uh, should probably have clarified this setup is for a convection oven. Because someone is totally going to put a pan directly on the heating element.

I love non-native English speakers, because they'll give you a well-crafted paragraph with one small mistake like "put a good use to that fat," then apologize. Meanwhile, native English speakers will type out a sentence like "y shuld i lern 2 rite gud?" with no sense of shame. You're bilingual, it's cool.

Amazing as always. I’d have thrown some chopped fresh tomato in that salsa too (which was next-level awesome IMO, as great as everything else was). I’m a bit skeptical of the hanging pork belly though. What does this accomplish that roasting it set on a rack in a deeper roasting pan doesn’t? The only real benefit I see is that it would be easier to swap out the salsa pan for the potato pan.

I don't understand why you hang it from a rack. Why not simply lower the rack, put the pork belly on the rack and let the fat render out onto the vegetables. There is no need for the extra twine.

i dont buy that hanging method... why not just use the rack and put the belly over it then put a cooki tray with vegetables below ? also seems they know what the dish is.. i mean how did they know its an avocado? the sauce is literally blended with a lot of chili and spice should overpower the avocado flavor
