Amazing as always. I’d have thrown some chopped fresh tomato in that salsa too (which was next-level awesome IMO, as great as everything else was). I’m a bit skeptical of the hanging pork belly though. What does this accomplish that roasting it set on a rack in a deeper roasting pan doesn’t? The only real benefit I see is that it would be easier to swap out the salsa pan for the potato pan.

I don't understand why you hang it from a rack. Why not simply lower the rack, put the pork belly on the rack and let the fat render out onto the vegetables. There is no need for the extra twine.

Guga. Love your videos but I can tell you are NOT the one who has to clean everything. Put some tin foil in the drip pan and make clean up quick and easy. Who ever washes the dishes will thank you. i dont buy that hanging method... why not just use the rack and put the belly over it then put a cooki tray with vegetables below ? also seems they know what the dish is.. i mean how did they know its an avocado? the sauce is literally blended with a lot of chili and spice should overpower the avocado flavor
