It is because it is a timelapse and the average blink is a 1/4 of a second long. Each frame in the time lapse is approximately 5 seconds long. The chance of him blinking in a frame is 1 in 20, but that does not even take into account the fact that the average human does not blink every second. So he was blinking just the frames selected for the timelapse did not show it.

I recommend mining no lower than y11 because at y11 you will be above the lava pools instead of next to or under them. You will still get the same ores.

It's foolish to mine with Fortune, as it fills up your inventory faster. Unless you're after cobblestone, you always want to mine with Silk Touch. It helps as well to carry a few empty shulkers with you so that you can stay in the mine for longer.
