Great video so far. Just an idea for the coal you found, is that you can make a campfire for unlimited fuel as long as you keep growing trees. Cause each campfire drops 3-4 charcoal, which could be used for fuel or torches. In a limited world this would be my idea.

Feel like a ender pearl statis chamber might've been nice for getting out of the portal. just set it on a 30 second tick timer and when you leave it pauses. When you came back to the overworld, it would've resumed and closed on the ender pearl making you teleport out.

Chickpea didnt despawn because you fed 1 chicken. The other 2 you did not feed and they despawned. When you feed an animal, they will not despawn.

about the chickens : you could have breed them in the nether, since the bred ones can lay eggs (the jockeys cannot). with a few of them you would have enough eggss to start a chicken coop in the overworld without them despawning. (they are not jockeys anymore).

The reason that one chicken didnt despawn is because you fed it a seed. It kind of "marks" the chicken and it wont despawn because it now "belongs" to you.

The chickens counted as hostile mobs as far as despawning mechanics work, if you bread them then the babies stick around
