Water travels up to 5 farm blocks. Whether or not there is a block in between. You can optimise this knowledge by placing water, going 10 blocks, placing water and so on and so forth. I've made some massive farm with minimal water. Best part, if there is a height difference in or near your farm, you can use the edge of the raised section to hide the water. Meaning you can completely cover a hill with crops with very little amounts of water showing. (0 bits of water if each ledge is only 5≤) (Added gaps between for easy reading- Courtesy of an adhd human who can't read text walls without struggling)
