A really cool video idea could be making "Frankenstein" recipes where you gather the best components and techniques from a variety of recipes and combine them to produce the best version of the dish. In this case, using Alton's recipe as a base, using Babish's recipe for the coating, then using Chef John's cheese technique.

I did Seriouseats buttermilk brine with Alton Brown's recipe otherwise, and adding parm+more seasoning to the crumb/chip mix. Also double dredging, fried in 2:1 butter and evoo. It's great.

@@GenXBecks Alton's TV show on food Network was GOOD Eats, and it is likely a large influence for most, if not all Food/science entertainment of the last 25 years- it was brilliantly done, it's quite unfortunate Alton is such a jerk. it doesn't save him but at least he has renounced orange man. Serious eats is a website/company of many talented food peoples one of which being Kenji López-Alt, a much kinder, humble, loving person.

That was very obviously a brain glitch. I was there for the dawn of The Food Network and watched all of those shows from episode 1. Which is why finding out that Alton Brown is a right wing nob was so disappointing.

The ultimate hack for chicken parm!! Mashed potatoes! I worked for a well known restaurant in Northern California and for our free dinner they’d make us their chicken parm but instead of the useless noodles they’d lay it on a bed of mashed potatoes. Friend chicken + mashed potatoes = Win. Cheese and marinara = big win Trust me.

David idk if you have ever tried Joshua Weissman’s chicken parm recipe but that one is truly one of the most unique and delicious ones i’ve ever made! the chicken parmiagiana was invented simultaneously in Australia and America; likely an evolution of the eggplant parmiagiana with the now suddenly plentiful and cheap chicken (in contrast to the expensive and rare eggplant for the era). All driven by a specific wave of migration from the South of Italy.

Not really, these do, but normally it’s simple. Besides the chicken, you need seasoned bread crumbs, eggs, salt and pepper, sauce, and mozzarella. That’s it, you don’t need the flour because the eggs stick fine to the chicken, and the bread crumbs stick to the egg wash.

My only real quibble was your decision to start with your obvious favorite. I think it would've been a fairer challenge to leave Alton's chicken parm till the end. I mean, you already knew that Alton's was your favorite before going into the challenge so starting off with his version seemed like it could lead to a bit of unconscious bias. And, I'm not really sure we can't say there wasn't that bias when you decide that Chef John's "feels like its own thing"--even saying it feels more like a "Milanese" rather than a parm. Perhaps, if you do a third installment, you might hold off on your obvious favorite till the last just so you don't kind of stack the deck.
