in canada, most of the buttermilk where i live is 1% or 2% fat, and it's often very watery/runny like regular milk would be. i'm so envious of anyone who can access really thick (higher quality) buttermilk! and finding buttermilk made outside of canada is very rare (and would be insanely expensive)

You can make buttermilk easily at home! Just use whole milk and white vinegar (I'd suggest looking up a recipe for quantities). The thicker buttermilk might be made with whipping cream instead or something like half and half. I'm not sure that the thickness comes from the quality of the ingredients. Could be wrong, though!

Yeah wtf was up with that thick-ass American buttermilk? It's def thinner but up here but thicker (a little) than regular milk. When I buy it I just buy whatever's at the grocery store, standard brand, no fancy stuff. The other guy is right, though, traditionally buttermilk is what's left over after making butter, which is super runny and thin. Since I've never had the 'real' stuff I don't know if something about the process thickens it up or not. Could just be Americans being extra and adding thickening agents?

The no-bake cheesecake, usually with digestive cookie base, is THE cheescake in my country. You don't even have to use actual cream cheese to it, but quark, whipped cream and some gelatine to make it stable. (and lime, strawberries etc. for flawor). If you can find quark, or other low-fat fermented milk product, try it out!

I've used the sweet Hawaiian rolls to make potato filling and it was amazing!! They sold them already torn up during Thanksgiving and all I had to do was toast them up! Added some depth and with the caramelized onions, it was so good~

We call that cheese cream in Norway and its amazing layered with crushed up oreos (in a glass bowl) we call that oreo pudding or as a safari cake (safari is the name of the choc chip cookies in the recipe) crushed up safari cookies mixed with melted butter, pressed into a cakeform, add the cheese cream (can add a little lemon or vanilla to the cream) and topped with cut up strawberries and whole blueberries, it's super good in the summer.

not just buttermilk - when making butter chucken, I also marinate the chicken overnight in yoghurt (plain or greek) with spices. lactic acid tenderizes the meat and lets it stay very nice and juice and melt-in-your-mouth-y
