So, chickpea flour is the vegan substitute for egg in baking because of the similar function the flour serves as eggs do in baking and so the reason why these recipes didn’t work was because you used them both and it ended up being twice the “egg” amount.

@@rls4072 It's starchy water--I think it's just cooking liquid from garbanzo beans/chickpeas (some other bean liquids work too) that's maybe a little extra starchy from the beans sitting in it for however long the can's sat. People call it "aquafaba". Make sure you scoop out the sludge in the bottom of the can because just like cornstarch slurry, the starches will settle to the bottom and you want all of it for maximum foam-age. As June showed, it whips up into a stiff foam, but it will collapse back into a liquid pretty quick unless it's got something to stabilize it. Sugar does well, or you can also stabilize it with cream of tartar just like regular egg whites!

Oat flour is water soluble fiber, hence the "mush" ( too much water in the end product) use wheat flour if you can & you'll get "American" pancakes. Also, if you use unsalted chickpeas for sweets & "meregues" you get a less earthy more nutrall flavor. Mushrooms, like not just the big three, but some of the wild ones would be awsome...ever made enoki & oyster musshroom stem carnitas? It's my fav.

Oh my gosh, I loved this. I have had these cans of chickpeas and besides hummus, I could not figure out what to do with them. I can't wait. Would love, love, love if you would do another experiment using cauliflower. I know its been done -- but you seem to put a different spin on everything. I really want to learn to make a good buffalo cauliflower. So far, I've failed.

Not a pavlova or meringue super fan but when I visited Australia I learned that the difference between the two is cornstarch. Did not see it added to the pav. This was a quick 40 minutes...loved it! Another home run by June. 👍 *_My favorites_* - tacos, gnocchi and biscotti. Definitely going to make the first two.

With the mousse rather than mixing the chocolate into the whipped aqua fava, traditionally you would take 1/4-1/3 of the whipped aqua fava and mix into the melted, cooled chocolate to lighten it up and then gently fold the lightened chocolate mixture into the remaining whipped aqua fava keeping more aeration in the mousse. I've made traditional chocolate mousse several times over the last 30 years. You have inspired me to try this variation. I wonder if the traditional method will work with the aqua fava instead. Hmm I'll give it a try

I cook for 52 people 2 meals 3 days a week as well as at home and one favorite is my Chickpea Peanutbutter Chocolate chip Cookie dough Hummus; which I make from just Peanutbutter, maple syrup and chickpeas from the can; no need yo add eggs or dehydrate the chickpeas...also with the chickpea pizza, you can also make chickpea cheese!

Silicone muffin/cupcake liners are awesome because you don't need a muffin tin. You can just use a sheet tray or a baking pan like you did with the paper liners. Also, they can be used to freeze portions of things and then the liner can slip right off after freezing.

Or coconut cream! I’ve also found that cooking some tapioca starch into a non dairy icecream base works really well to keep it from being a rock in the freezer and giving it a nice stretch and meltability

How have I never heard of Aaron? Who is he? I swear I watch everything you post haha That chickpea skillet cake looks amazing. Ive never made anything sweet with them but wanna try now. Chocolatecoveredkatie’s blog has really good Nacho flavors of hummus that I definitely recommend!

Don’t bother with muffin tins, just get the stand alone kind from Paper Eskimo or Simply Baked. They’re great and no extra pan to take up space in a small kitchen

When making meringue with egg whites, try adding in some white vinegar and cornflour (cornstarch). This is how we make it here in Australia. It becomes crispy on the outside but marshmallowy on the inside. I make it every year for Xmas
