LOL I’m SO with you on that!! I may not like chickpeas or meatless recipes that much, but gosh don’t we just LOVE her creativity, super wacky zaniness, and ridiculously infectious enthusiasm and positivity with everything she makes? I honestly will watch June’s videos no matter if it’s 15 mins or over an hour, she has the best personality and makes cooking so fun!! But when she spoke on BLM ✊🏿 ✊🏾 ✊🏽 I cried and some people are just gifts to everyone.. thank you June! I can’t imagine that delish is paying her enough! ☺️

So, chickpea flour is the vegan substitute for egg in baking because of the similar function the flour serves as eggs do in baking and so the reason why these recipes didn’t work was because you used them both and it ended up being twice the “egg” amount.

Sarah America That liquid serves the purpose of “egg white”, while the flour serves as whole eggs would in baking or as they “bind” things.

@@rls4072 It's starchy water--I think it's just cooking liquid from garbanzo beans/chickpeas (some other bean liquids work too) that's maybe a little extra starchy from the beans sitting in it for however long the can's sat. People call it "aquafaba". Make sure you scoop out the sludge in the bottom of the can because just like cornstarch slurry, the starches will settle to the bottom and you want all of it for maximum foam-age. As June showed, it whips up into a stiff foam, but it will collapse back into a liquid pretty quick unless it's got something to stabilize it. Sugar does well, or you can also stabilize it with cream of tartar just like regular egg whites!

Everyone commenting about giving her a muffin pan and more space etc. But she's trying to show people how to work with what they have in their home. No matter the space or devices. Lots of people including me don't have a food processor, blender, muffin pan or so on! Power to her for working with what she has to produce videos during this time

Dehydrating the chickpeas and grinding them into flour to use for your chickpea muffins would help with the texture.. they all look so good.. my fav is the Biscotti.. omg.. I am heading out to buy some chickpeas.. mmmmmm

Oat flour is water soluble fiber, hence the "mush" ( too much water in the end product) use wheat flour if you can & you'll get "American" pancakes. Also, if you use unsalted chickpeas for sweets & "meregues" you get a less earthy more nutrall flavor. Mushrooms, like not just the big three, but some of the wild ones would be awsome...ever made enoki & oyster musshroom stem carnitas? It's my fav.

throw chickpeas into a banana smoothie for extra protein :) cant taste it - it's really good! Also vanilla extract, peanut butter or peanut butter powder, cinnamon, and your choice of sweetener :)

Oh my gosh, I loved this. I have had these cans of chickpeas and besides hummus, I could not figure out what to do with them. I can't wait. Would love, love, love if you would do another experiment using cauliflower. I know its been done -- but you seem to put a different spin on everything. I really want to learn to make a good buffalo cauliflower. So far, I've failed.

Not a pavlova or meringue super fan but when I visited Australia I learned that the difference between the two is cornstarch. Did not see it added to the pav. This was a quick 40 minutes...loved it! Another home run by June. 👍 *_My favorites_* - tacos, gnocchi and biscotti. Definitely going to make the first two.

I haven't enjoyed biscotti in so many years. I used to get it weekly at Starbucks, Barnes and Noble in Saginaw, Mi. Without a car, I lost my way to get there frequently. That and a creamy coffee took me to heaven in the first sip and dip.

Thank you for the Chickpea marathon! Love your recipes. We also are very sad and heartbroken over the G. Floyd incident, and so sorry for things that are going wrong now in various cities and states. A word of educational warning though, Be sure to do your research on the background of organizations that you wish to donate to. Always remember our civil rights are not to be trifled with for others of anarchy intent who promote their own agendas and beat up innocent people. Be careful and blessings for all you do.

I have definitely never heard of whipping in the chocolate in the mousse, only folding. But the good thing about mousse mixups is they make good icecream

Yeah, I fumbled that one up, but surprisingly mousse texture was pretty spot-on after chilling!

I have to say I LOVE that you don't measure.. My BF gets mad that I guesstimate . Cooking should be experimental and fun. Its only food. lol can't waste it... I have a request on what to do with all my pinto beans

With the mousse rather than mixing the chocolate into the whipped aqua fava, traditionally you would take 1/4-1/3 of the whipped aqua fava and mix into the melted, cooled chocolate to lighten it up and then gently fold the lightened chocolate mixture into the remaining whipped aqua fava keeping more aeration in the mousse. I've made traditional chocolate mousse several times over the last 30 years. You have inspired me to try this variation. I wonder if the traditional method will work with the aqua fava instead. Hmm I'll give it a try

Love your channel, love Chickpeas! I cook for 52 people 2 meals 3 days a week as well as at home and one favorite is my Chickpea Peanutbutter Chocolate chip Cookie dough Hummus; which I make from just Peanutbutter, maple syrup and chickpeas from the can; no need yo add eggs or dehydrate the chickpeas...also with the chickpea pizza, you can also make chickpea cheese!

Silicone muffin/cupcake liners are awesome because you don't need a muffin tin. You can just use a sheet tray or a baking pan like you did with the paper liners. Also, they can be used to freeze portions of things and then the liner can slip right off after freezing.

Or coconut cream! I’ve also found that cooking some tapioca starch into a non dairy icecream base works really well to keep it from being a rock in the freezer and giving it a nice stretch and meltability

How have I never heard of Aaron? Who is he? I swear I watch everything you post haha That chickpea skillet cake looks amazing. Ive never made anything sweet with them but wanna try now. Chocolatecoveredkatie’s blog has really good Nacho flavors of hummus that I definitely recommend!

Don’t bother with muffin tins, just get the stand alone kind from Paper Eskimo or Simply Baked. They’re great and no extra pan to take up space in a small kitchen

When making meringue with egg whites, try adding in some white vinegar and cornflour (cornstarch). This is how we make it here in Australia. It becomes crispy on the outside but marshmallowy on the inside. I make it every year for Xmas
