i hate piping bags too! cheat like i do, twist then put a rubber band tightly on it so it doesnt come out of the end.

Not sure if this would help after 4 years haha. But regarding pastry bags as a general rule, a lot of pastry chefs like to use a plastic scraper to push all the filling in the bag to the piping end. This helps remove any air pockets which can cause issues with piping designs for example. Regarding the spilling issue its very common with most people I've worked with who are new to piping, so please don't beat yourself up over it. Piping is fun once you get the hang of it. You can try twisting the open end of the bag once its filled until you have a long tight 'rope' and then twirl it inwards around your pointing finger. Then hold it down with your thumb. If your filling is too much in volume and you have trouble pushing it out, you gently use one hand to push from half way up the bag. This way you can enforce enough pressure and control your piping while also preventing from coming out the other end. PS: I find it helpful to get used to one hand guiding and stabilizing the bag, while one does the squeezing. Hope this helps Jamie! :) I thought the buns looked good despite the cross btw.

It’s interesting to see your approach mature as you learn to know what you are doing. At the beginning I was kind of annoyed at the rush you were in, but put it down to inexperience. Sometimes I wanted to shout out instructions as to what you were doing wrong. Now it’s easier to watch, as you become more knowledgeable about what you are doing, and spending more time on directions. I started watching at year six, it was fun to find the beginning. What a great adventure you set out on. Love to laugh at the misadventures, as well as true adventures. Thanks for the entertainment.

Monsieur Tracey, yeah, sultanas are not my thing but anything forgets with a thick sugary cross. Some tips from traditional late 1600s recipes... - the cross is cut on the bun to make a wedge before the sugary frosting is piped on. - the dough mix has lemon zest. love, S

I have been making hot cross buns for 40 years, and before that my mother had been making them since 1950’s. We have always used currants, and cut a cross in the top of the bun just before baking, then made an icing for the cross while the buns are slightly warm.

when u use the piping bag, fill it half way then twist the top until it is taut to the mixture in the bag. Grab the bag with your dominant hand right at the base of that twist and squeeze from there. use your other hand just as a guide. Then it wont spill out and it is easier for doing details.

Looks yummy. I learned to twist the end of the piping bag after pushing the filling up front. Prevents the spillage 👍🏼

i def recommend a re-useable piping bag. they're great and you just have to wash them out after each use but you won't get that issue with the bag splitting

Nice!... I used to curse every time I had to use a piping bag too but I learned a couple tricks...sticks the bag into a glass and fold over top makes it easier to spoon in the icing or whatever and don’t over fill! You may have to refill more than once but it won’t explode! Hope this helps ☺️

i knew there wasn't going to be a victory dance here. regardless of the cross they look like they were a really good bun, so focus on that! in relation to the piping bag, fill it less and make sure its twisted tight at the top. they're tricky to begin with. have a look on youtube, theres probably a piping bag tutorial. once youve mastered the piping bag i'm fully expecting an entire victory dance routine

When you pipe the crosses, you shouldn't pipe each one individually. Put them on the tray 3x4, pipe a line straight down a whole row at a time, making a grid pattern. An X on each one!

I always prefer over butter or oil as it always guarantees to come off the tray! That’s just my preference I think. I do want to invest in one of those baking silicone mats

Like others have said in the comments, when using a piping bag, make sure to twist the top of the bag after putting whatever you’re going to pipe in the piping bag. And then make sure it stays twisted while piping. This will prevent a frustrating messy disaster. Using a piping bag is an entire skill in itself. Just takes time and practice :) I’m sure you’ll get there!

Oh it's time to use disposable piping bags (clear plastic ones) and fill them less. The one you're using is a pain. Also for the love of God put some butter on the buns when you're eating them 😄
