Great recipe try out, Merle. Not really surprised that it didn't pass your taste test. I think the subtle flavour we look for in mozarella doesn't come from fermentation. Fascinating and fun as always, thanks.

I used to make this recipe all the time! I need a new blender, though. With the leftover chickpeas I recommend making chickpea chocolate chip cookies!! Super good

I always have leftover aquafaba. I don't like meringue and I don't know what else to use it for. I won't be making this mozzarella (can't afford the other ingredients), but since you have leftover chickpeas I am assuming you use aquafaba for more than mozzarella? Do you have any tips?

@@goranbreskic4304 you can use it for anything, actually. Try it as the liquid part of pancakes - it's a great binder and you can make them gluten-free and egg-free so easily with it. Which also saves money on ingredients (like eggs). But you have to experiment a little, maybe it won't turn out right the first time round. Also, I don't know about the aquafaba of the brand you use, but I have mine freshly made from just boiling chickpeas, and it's the most beautiful comforting broth. Salted, I can have it hot on its own or as a soup base. It feels rich and enveloping, not unlike a good bone broth.

"Don't cry for me Aquafaba" has been playing non-stop in my head ever since I first watched this Also I had this weird coconut mozzarella a couple weeks after I went vegan, that was almost 6 years ago and I still haven't recovered,,, the taste still haunts me in the night

Although I like coconut, I really dislike something about coconut oil in all the vegan cheese, yogurt etc. I think it's the very thin, oily texture maybe? I recently bought some Miyokos oat milk butter and ended up throwing it out for just this reason. I'm thinking coconut oil must be a cheap ingredient, which would explain it's (imho) over-use. Also check out Mic the Vegan's rating of oils for health benefits. Coconut oil is not healthy at all despite it being touted as such when it first appeared in our lives.

@@sarahdee374 Yes, something just makes me feel bad when I eat coconut cheese. Where I live it really tastes like cheese. Crappy cheese, but cheese. It actually has better texture than the worst dairy cheese when you melt it, but I feel so bad after eating it that I will rather be without it.

@@goranbreskic4304 I'm aware that coconut oil is a stimulant to thyroid function. So if I eat a lot of it I get that jittery feeling, like too much caffeine. So I stay away for that reason too. But I see it increasingly as an ingredient in processed vegan foods. Yes, folks, I know I could stop eating all processed foods, but busy life, lazy cook. I minimize my intake but some tastes good and is relatively clean. Thanks for sharing your experience too, Goran.

a bit upset there wasn’t a baking element. like making the mozerella sticks or a pizza maybe. but this is so neat! will i do this myself? probably not. but it looks like it grates just like the store bought vegan mozerella cheese i’ve gotten. very soft and kinda slimy 🤣

I feel like It could be a good vehicle for making other cheeses. Dump in some more nutritional yeast, maybe a little gaaaalic, or some chives or something. Bang some more cashews in it.. I dunno. Love the idea though!

Not sure if this would work for a vegan cheese, but for a dairy cheese, freezing it for a little bit helps in the grating process.

Wrapping it in a tea towel after a couple hours helps with the texture a lot by soaking up some moisture

Hi So I try to practice a plant based diet where possible and love these kinds of videos Just a question, I know in previous videos Merle has used nutritional yeast in vegan cheeses, why wasn’t that used here? Is that because mozerella is, like she said, a more plain and mild cheese known for its stretch and melt so it wasn’t needed to add the flavour? Thank u

I'm actually shocked at how much the microwaved version actually looked like microwaved baby bel cheese. I can't attest to how it would taste as I've never made this before, but the look is spot on

This is very intriguing. This would probably shred better if you froze it. I'm on the hunt for vegan butter and cheese recipes. The sticker shock at the grocery store is getting to me so I just want to make these things myself. The biggest problem I've run into is 99.9% of recipes call for coconut oil and coconut oil is very high in saturated fat. I have high cholesterol, thanks to genetics, and I had an allergic reaction to statins. So I have to cut as much saturated fat out of my diet as possible. Anyway, wondering if there are any suggestions for coconut oil replacement in vegan butter and cheese. Also, carrageenan gives me stomach cramps so I'd try agar.

I mean... oil is oil...so another oil that you are able to eat could be grapeseed, low in saturated, high in polysaturated, avocado oil is low in saturated, high in monosaturated,

@@bazli83 I see what you are saying but I fell down a rabbit hole of oils this week. And what I discovered is in certain uses oil is not oil. Since coconut oil solidifies it is different than other oils. Which is why it is used in making faux dairy products. I am probably going to try using avocado oil since that will somewhat thicken when cold and not leave any after taste.

Fourth test should be seeing how long it stays in the frig. If it keep, than it can be bulk made and maybe even frozen... FIFTH TEST: How is it after freezing and thawing???

Kappa carrageenan is not replaceable, you need to find kappa carrageenan vs other carrageenans as they have totally different properties. You can also use this for making vegan marshmallows!

I also just make them using with tapioca starch with any non dairy milk with some other stuff like nutritional yeast, chili powder and some MSG. You can skip the MSG and put salt (I like MSG better tbh or you can swap it with other umami things)

Actually the mozzarella in the us is milder then the italian one because is what we call fiordilatte, which is made by cow and not by water buffalo whose mozzarella is more strong and salty.

Ok but the REAL question, and one most people won't want to answer but I need to know... does it cause gastrointestinal issues? Aquafaba is known for bringin' the farts, and a big part of why I'm making the jump from vegetarian to vegan is because both eggs and dairy upset my stomach. Every time I see a replacement for either, I'm always so skeptical when it involves aquafaba. 😅

I think when starting a vegan diet it's a good idea, due to the high fiber intake, to take a product like Beano-o when eating beans (lol) or cruciferous veggies. It help me a lot in the beginning. I still use it when I get some undercooked broccoli or beans. Honey, makes a world of difference and your family and friends will thank you!

Too much lactic acid. It gives that “funk” that aged cheddar has. Mozzarella is not funky

There are shreds you can buy that have a base of pea protein, but that's not fatty the way nuts are. Flax milk is also a thing and is way better for cooking than oat milk, but not very drinkable.
