have no idea if this is true, but remembered hearing/reading that salt changes the texture of lentils based on when it's added: "The other trick is to wait to add the salt or any acidic ingredients until the lentils are done cooking. These ingredients can cause the lentils to stay crunchy even when fully cooked. If you stir in the salt while the lentils are still warm, they will absorb just enough to taste fully seasoned." You can test it out next time you make it

Having made many, many a soup and dahl with dried red lentils, I can say, personally, I've never had that issue. I season at every point of the cooking process, especially when browning off the first aromatics, and I'm definitely liberal with the salt! Never had any crunchy lentils left once the meal is done cooking.

omg! I (as an non-vegan) have been making this recipe for years now and it's still one of my all time favorites!! AND!! very important: It's so freezable!! Every time a need a super quick meal i just pop little container right out of the freezer and, voila, within minutes a wholesome, comfy, nutritious, jummy meal. And you can add anything on the side and it will taste good. And instead of crushed tomato's , i use more like a passata/tomato puree to make it even more creamy and rich. LOVE IT!

Rainbow Plant Life is one of my favorite cooking blogs ever. Basically anything from the website is amazing, albeit some dishes require a lot of effort to make. The Palak Tofu recipe has become a classic in my cooking rotation.

As a flexitarian, every time I don't know what to make, I end up making red lentil dahl. I love serving it over short grain brown rice. The nutty texture goes so well with the creaminess of the lentils.

This is my all time favorite recipe. We make it every couple weeks if not more, and always add a veggie (usually spinach) at the end! Have never had a RPL recipe we don’t like.

Yup. Spinach at the end is the best addition. My secret ingredient is thai green curry paste instead of nut butter. Also not traditional, but the aromatics in it really shjne through the lentils.

Can confirm as a non-vegan person,this dish is DELECTABLE!Ive made this numerous times,also with chickpeas(but it took more time).You can also add some spinach,cubed potatoes and carrots....list goes on!Since i am greek and i live in greece,legumes are in our weekly diet at least twice every week,soups.All soups that contain legumes have carrots and potatoes.Nisha's curry recipe is the best!Funny enough,ive tried it with chicken as well and it worked wonderfully(i know its not vegan duh).So yeah,trust Nisha!

3:50 Actually, I watch this docuseries on netflix that went into cooking in India, and way way back when and maybe in some places still, they used cow patties to fuel the fires, so the heat was always low and slow, so when I do my curries, I don't go above a 3 or 4 on the burner.

This is literally my go-to weeknight meal because it’s SO good, so cheap, and makes so much. But just like others have said, I have not had a recipe of hers fail. Truly can trust Nisha to deliver. You should try her tofu tikka masala! It’s a larger commitment time and ingredients wise, but it is extremely delicious and worth the effort.

This is one of my wife’s and my favorite meals. For us, we find 3 cups of stock (rather than 2) to be much better. I also like to add tofu and roasted cauliflower that has a good char. 😋

If you use cashew butter instead it tastes EXACTLY like korma. Nut butter isn't totally untraditional since ground nuts are used often in south asian cooking sauces. Also, the coconut milk is what cuts down the spiciness/spices which is why you use so much in the beginning.

I make this recipe at least once a month! I use tomato sauce instead of crushed because it makes it a thicker curry. I would also recommend trying Nishas cauliflower soup! Easy, simple ingredients, affordable, and tastes great.

FYI, Nisha has a new cookbook coming out in September, available for pre-order now, called "Big Vegan Flavor." It looks wonderful and very comprehensive for not just new recipes, but for setting up a great vegan panty and vegan cooking in general. I have what Nisha calls a "baby mouth," so usually make this with the pasilla peppers from my garden which are plenty hot for me, but probably wouldn't even register with many lovers of spicy peppers.

My mum used to make this all the time and i got so bored of it. Now i make it maybe teice a year but i par boil the lentils with the spices and then add it to a lot of fried onions etc which are browned then just add the cocnut milk. I also add cut up okra near the end till just cooked and not slimy.

I was actually really excited about this one and was gonna make it myself but then it got to the spices and the coconut oil and the almond butter, and I was like nooope hahha. No offence!! I'm just so picky!! I wish I wasn't!!! 😥 Hmmmm... (I get it, you can leave some(?) of those out, but wouldn't that change the flavour too much? Plus, don't think I could just not put in the coconut oil and the almond butter.. Sad. But ain't got no one else to blame but myself I guess lol.
