I probably would have, after soaking the mushrooms in the BBQ sauce, baked them for a bit just so some of the sauce could caramelize. After baking, I would have topped with additional BBQ sauce if necessary.

Caramelize the onion and garlic for the milk, then blend together, then brown the mushrooms with the sauce so it thickens around them. Maybe add some smoked paprika to the mac, so it connects better with the mushrooms. Love your videos!

My favorite way to use onions in mac and cheese (vegan or otherwise) is to dice them finely, saute them on low heat until they turn dark brown and jammy, and then add them to the sauce.

I cant help but feel like Mr. Gaz got some of his inspiration from O.G. Lauryn Toyota another fellow vegan youtuber. This one looks a lot closer to how I used to make my dairy mac and cheese. I haven't tried either, but I have tried yogurt in vegan cheese sauces before and it made them taste tangier than real mac and cheese. My kids didn't like it and I didn't care for it as much either. If you want something closer to dairy version I think this would be it. They are probably both still really good. I want to make the oyster mushrooms with the barbecue sauce! I wish I could source them more easily where I live.
