just FYI most cheeses are lactose free or are at least very low in lactose since the lactose is converted into lactic acid during the cheese making process. So for all lactose intolerant cheese lovers who bought the expensive "lactose free" labled cheese, they got you gud :P

yes, really. But it isn't necessarly true for all cheeses, for the most part it depends on the age of the cheese, so a young cream cheese probably still has enough lactose to trigger the consequences of lactose intolerance while a 2 year old parmisano reggiano is probably completely free of it. normally 6 months should be enough to get rid of most of the lactose but if you wanna be save do a bit more research yourself.

In switzerland we use this device called "raclette wheel". It's much easier to handle, but I liked your idea to melt the cheese this way as well. We often put raclette on a table grill, eat it with pickles, silverskin onions, potatoes, even pears. It's delicious!

uhm, yes it's call Raclette. BUT this is a real low quality of Cheese. And the potatoes get cooked with the peel and then peeled. If you don't have a Raclette-Oven, cut the cheese in slices ev. 0.2 zoll (true swiss eat also the cheese rind), put it in a cold frypan then in the hot as posible Oven till it get's a light brown color. top it with a seasoning mix (paprika powder, nutmeg, black peper). On side potatoes, sour mixed pickles and dry meat like country ham, bacon or bresaola. i know my english is sad, but i'm swiss.
