► Cooking recipe and ingredients:

* Strawberry filling:
150g strawberries (fresh or frozen).
50g sugar.
1 tablespoon lemon juice.
Bring to a boil, cook for 1-2 minutes.
Grind into a puree.
15 g cornstarch + 15 ml water.
Cook, stirring constantly, until the mixture is thick.
Let cool down.

* Merengue:
200g egg white.
Beat until frothy.
300g sugar. Drizzle in little by little and in small portions.
Beat until even peaks form. The sugar should be completely dissolved.
1 teaspoon lemon juice.
25 g cornstarch.
Sprinkle with cocoa powder (optional).
Bake in a preheated oven at 150°C (302F) for 30-35 minutes.

400 g mascarpone cheese (or other cream cheese).
50g powdered sugar.
1 teaspoon vanilla sugar (or vanilla extract).
100 ml cream (33-36%).

It looks fantastic ??❤️ If I want to serve it at afternoon 5.30 pm , when can I make the roll and meringues , so they stay dry and fresh? If I make meringues the day before , and finish with roll and strawberries the next day , will it be crunchy ? Thank you
